Chilli thing is new for me as well because usually when my mom makes it she keep it in warm place over night but when making the idli she adds little bit of eno too to make it sponge. Chill thing needs to get tested

As a chef myself, I tell a secret when making dosa idly batter.instead of using broken urad dal,use whole,deskinned urad dal or they call it Gola. Means whole. Wash the urad dal 4-5 times until the water comes clear.soak rice separately,add half spoon of methi or Fenugreek. Soak only 4 hours.not more than that. Don't use the mixer to grind the urad and rice,use stone grinder only.dont add salt.add salt to the batter while you preparing the idly plates to keep it in the stream.
