Fan Tuan (sticky rice rolls) is a signature street-food breakfast item served in Taiwan and China. This is my grandmother's recipe that my mother would pack for lunch for school. It features tightly wrapped youtiao (fried Chinese doughnut), pork floss, preserved sour mustard, pickled carrots, scallion, and a perfect egg.

Rice Ingredients:
- 1/4 cup Purple Sticky Rice (soaked overnight)
- 3/4 cup Short-Grain Sweet Rice (soaked overnight)
- 1 tbsp oil
- 1 cup water
Sticky Rice Seasoning Ingredients:
- Cooked Sticky Rice
- 1 tbsp Mirin
- 1 tbsp Rice Vinegar
- 1/2 tsp Sugar
- 1/4 tsp Salt
Toppings ingredients:
- Pork Floss (as needed)
- 2 Chinese Doughnut (youtiao) - if frozen, cook per packaging instructions. If fresh, bake at 350F for 5 minutes.
- Egg
- 1/3 cup Preserved Sour Mustard - rinsed, 1 tsp sugar, 1 tbsp water
- Pickled Carrots (as needed)
- Scallion
- Cucumber strips (as needed)
- 1 tsp Fan Tuan Sauce
Fan Tuan Sauce:
- 1tsp Siracha/Chili Sauce (optional)
- 1 tbsp hoisin
- 1 tsp soy sauce
- 1/4 tsp sugar/honey
