it's probably because most of them were the actions of one (or a few) employee, whereas that one was about the actual state of the restaurant itself. it's the only one that could potentially set them up for being sued.

I used to work in a sushi vicinity and we cleaned the kitchen twice a day with bleach and one-of-a-kind soaps, i as soon as determined a cucumber below a fridge soaked with cleansing merchandise and bleach and my supervisor instructed us to wash it and made us use it both way.
