Come experience the famous Fuunji tsukemen shop in Shinjuku, Tokyo. Long lines are common to get a seat at Chef Miyake's award-winning restaurant, but I can tell you that the wait is justified. I've been here twice for the tsukemen and will probably be back again for the ramen. Not only are the noodles amazing, but Miyake-san is fun to watch. I don't know if any other ramen chef has as much rock star flair as he does.

Fuunji is one of my favorite shops in Tokyo. From all the videos I´ve seen that cover Fuunji (and I´ve seen plenty) yours captures the unique atmosphere best. Finally I can show my friends what Fuunji is like. Thank you very much.

I went there, it was the best ramen I’ve ever tasted. Nothing in the US compared. I had the special ramen large size and it was HEFTY. I was stuffed in the end, the difference is in the broth. You can tell in Japan they take pride in creating flavorful broth, in the US it isn’t as flavorful.

Cooking in japan is a craft. Its beautiful to watch this chef work! Reminds me of a sushi restaurant I used to eat at in Manhattan. The chef had the same precision and accuracy its beautiful to watch and eat their art.

Wow, a lot of Filipinos and other foreigners line up to eat here. But they are not eating that fast though when it's as crowded as this shop, unlike Japanese people. I learned to eat fast in Japan even in not so crowded shops. When the borders open, there will be even more foreigners documenting their experiences in photos and videos, but I hope they still show courtesy. And the, by the way, the bland soup on the counter is not really to make your dipping sauce hotter or increase its volume, it's poured over your bowl of dipping sauce so you can sip it like a normal ramen soup.

You know, my memory fails me. Sometimes with tsukemen the noodles would be cold, but some places give you a choice. I believe Fuunji does. If not, then they were lukewarm.

Indeed! It's interesting how the vibes are in different ramen places. It seems fairly common that these kinds of "sit at the counter" shops are frequented mostly by people there just for the food, either because they're solo and coming for a fast meal or because they want to try the chef's cooking. Either way its mostly eat and go without much conversation.

I'm so confused, why does he pray the water all over the ground??? otherwise, I can't even tell what he's doing with his motions which is interesting
@YumPassport
@YumPassport 2 жыл бұрын
After finishing boiling the noodles ramen chefs will usually shake the water off of them. Sometimes they do it onto the floor (where they have perforated rubber mats and will hose down everything at the end of the day). The other motions like the spinning is just his personal flair, it doesn't actually change how the ramen is made.

This is totally sped up, it's running at a faster than recorded frame rate, just enough to try and fool you.
@YumPassport
@YumPassport 4 жыл бұрын
It's not. I recorded it at 60FPS with a proper shutter speed of 1/120, and the video is playing back on KZfaq at 60p. I think there was just the perfect combination of slight camera sway during the action with the high frame rate that makes it look sped up, especially if you're accustomed to only watching 24p footage.
@Xexna
@Xexna 4 жыл бұрын
@@YumPassport You can lie to yourself but don't try to lie to me. You can even see clearly in the cut at 1:55-2:00 the speed difference in all the people's movements, faster eating, faster walking, faster cooking and not like they are naturally moving faster. This is doctored footage, and you are a liar and a fraud. You have brought shame to Fuunji and their staff by trying to advertise their business under false pretenses. You should be ashamed.
