Asparagus is a lovely food ingredient to use in your regular diet because it is chock-full of beneficial nutrients!
In addition, it has almost no fat content and very few calories. It has four grams of carbohydrate and two grams of protein.
Other than that, asparagus contains only vitamins and minerals.

I dehydrate my asparagus ends that I would have thrown away and make asparagus powder that I can use in soups or anything I want to add flavor to, like stir fry etc.

I've been binge watching all of your fermenting videos! You've inspired me to move beyond sauerkraut. And I love my Mason Tops kits too. It will be a few years before our asparagus is ready but we live down the road from the Amish which is great. Thank you for the inspiration!

About 4 years ago I put in 250 asparagus crowns and what a good investment! It just keeps giving. Got the crowns from Nourse Farms and it was really a good price and beautiful roots. I also bought the fermenting kit you recommend. I only have made sauerkraut in the past and I am going to give this a try. Thanks for the info.

Charles Martin I used to help my Momma can vegetables every summer. Wheeee! What a job that was! I like the fermentation better, because the veggies taste fresher, crispier. I do not have any sunlight that hits our yard for a garden, so must go shop at farmer's market. It's a nice one! Enjoy your Momma, while you have her :-)

I have not done asparagus yet, but recently did a jar of brussel sprouts. I was not sure they would work, but then I watched your video at the seed festival and you specifically mentioned them, so the timing was perfect. I was not sure what to expect, but they turned out great. I know the longer they 'go', the better they will taste too. Thanks so much!!

Stacy I use the cut offs for cream of asper- gas lol, I puree them for the stock to help with flavor of soup as you may know cream soups need the stock to be stronger as cream seems to mask the flavor of the stock.

The reason is, the roots go down up to 14 feet in the ground. It reaches minerals that other plants cannot get.

I love asparagus so much! And I had no idea about why some people smell the difference in the potty and some people don't. That is so interesting! I will have to try to ferment some. Sour foods are my favorite! I just love fermented foods, but I have never fermented myself.

Wow, I had no idea asparagus was loaded with all these wonderful nutrients. I'm learning so much from you guys. Shabbat Shalom Doug & Stacy! I've spent the last couple days marathon watching your channel and LOVE IT! (I'm horrible though and didn't comment because I was so eager to get to the next video lol. I'll have to go back and comment!). I love those Pickle Pipes, I got a package of 4 for my birthday but we like our veggies fermented for 4 weeks so I think I need to get a whole bunch more because I cannot wait that long to start something else lol. I do my asparagus exactly the same way except for the hot peppers and I will DEFINITELY add them next time! Don't know why I never thought to add them before, YUM! Shalom from Canada!

A study of people that live to 100 showed they produce twice the amount of glutathione compared to a normal person. That's fascinating that asparagus is high in it. Thanks for pointing out the great benefits in each particular food you discuss.

Hi Stacy, Awesome video Thank you. I have never tried fermenting, Is it merely for taste or are there increased health benefits of fermenting? Also I wonder because of the sulfur content in asparagus, if it helps to ward off urinary tract infections. Thank you again for the video, My wife and I can't wait to try fermenting.

Ok I am going to try this. My asparagus is really producing this year! BTW, I love your cookbooks and your channel! You two are awesome!!!! I showed my husband this video and I was like look at Doug six years ago! He looked so much younger! LOL But Stacey, I think you look healthier now than you did then. You two are truly a blessing! I want to meet you guys one day!!!!! How do you cut up those woody ends to saute? Just tiny diced pieces? The woody ends always seem to stay woody even when I saute....

Ok I did the asparagus not sure they came out ok or not they are a bit salty at least more then i would like they are good can only eat 1-3 at a time. should be salty. love the crunch. ty

I'm the only one that really likes asparagus but the rest of my family likes pickled and brined food usually so this is a great Idea for them. These sound so yummy I think I've caught that fermenting bug you guys spoke of, for once I hope this bug is contagious :)

Haha, I got 29.. um none the less good video, and informative. My parents use to take us asparagus and morel mushroom hunting in the spring, I love them both. .!! Do they stay like the carrots, when you ferment them?? or get soft?

I am waiting on my Masontops to start fermenting some Veggies! I can't wait.. I think my first ones will be carrots and asparagus! Those sound so yummy. Would it be okay to add garlic to both ferments when I start them? Second, I live in south Florida and wonder how long you think for ferment to he ready.. My home stays some what warm when we are not home. Thank you in advance😊.

I imagine that you may have had asparagus that wasn't properly trimmed prior to cooking. In the video she mentions the stalks that are left over once they are snapped off from the breaking point as the stalk is bent. Try them again if you can, they are easy to prepare and tasty!

HELP Stacey: should these asparagus be soft at day 3 or crunchy? Mine are soft & not very tasty or tangy. Maybe I don't have enough salt in brine & it's a fail. Please write me 😱 I am now fermenting stuff because of your channel! 👏

I'm very new at fermenting and I bought the fermenting kit. Ready to try it using cabbage. I have well water. I love my well water and I drink it straight from the faucet. Can I use well water instead of purified water since my well water does not have any chemicals in it?
