Ingredients:
1½ kg bone-out pork belly
1 tbsp bicarbonate of soda
3 tsp fennel seeds
1 tsp chilli flakes
For the stuffing
1 tbsp extra virgin olive oil
1 medium onion, finely chopped
½ fennel bulb, hard core cut out and discarded, the rest finely chopped
½ tsp coriander seeds, crushed
2 garlic cloves, crushed
250g minced pork shoulder
1 slice sourdough bread, torn into small pieces
25g toasted pine nuts
grated zest 1 unwaxed orange
3 dried apricots, finely chopped
3 sage leaves, finely chopped
½ tbsp rosemary leaves, chopped
½ tbsp lemon juice
freshly grated nutmeg
1 egg, beaten

If you’re leaving the pork in the fridge over night (uncovered) that will dry out the skin and you can skip the boiling.

Did your pork belly have the skin on? does it make a huge difference if the pork belly has no skin?

Zone4Gardener - Thought all pork belly had the skin on, how else would you get the crackling?

i raise my own pigs. the guy who comes to slaughter them removes all the skin when he dresses the pig for the butcher. i got the slab bacon; but you're right, of course no crackling. FYI- an update: i made the "porcetta" recipe for xmas, and used the lace fat around the roast. its not crackling, but fair enough. i dont think ill try it again without instructing the slaughter man to leave the skin on.

Zone4Gardener - OMG! How fortunate you are to have your very own pork. I've tried some other recipes, but this one is really very simple and delirious. I served it with a Port wine sauce, caramelized apples and sauteed Spinich. Very pretty and festive plate! Thank you for taking the time to reply. Peace.

You have to scald the pig and scrape the skin in order to leave the skin on.

How do you roast a store bought frozen porchetta. Anyone care to share

Thaw it, dry it as best you can, allow it to come to room temperature before roasting. Then place it in an appropriate sized pan and place it in the oven. Check to see best time/temperature for your roast. Has the meat been stuffed and trussed with butcher’s twine ? Hope this helps. All the best.

Great job stealing Ginarro Contaldo’s recipe to a t and not mentioning it at all.

I've just came from one of Ginarro's porchetta recipes and his used chicken livers in the stuffing with mortadella and not as wide a spice blend as this. He was also more artful with the way he rolled his joint. This recipe was very different. Maybe he has a different porchetta recipe with a similar flavour profile?
