When I think of FIDEO WITH GROUND BEEF AND POTATOES, I think of my childhood, I remember coming home from school and my momma having a big pot of this wonderful dish on the stove waiting for us. She prepared this dish throughout the year, Winter or Summer and not only is it delicious and easy but it’s very affordable and it goes a long way. Everyone I know loves this dish, and children love it too. We always had it with delicious beans on the side and freshly made tortillas. I have continued the tradition and am sharing this wonderful recipe with you, I hope you give it a try.❤️

INGREDIENTS _________________
1 lb. 80/20 ground beef
1 C. Chopped onions
3 small / medium green onions (with some green part)
3/4 C. diced green Bell pepper
1 Celery rib (slices)
2 Serrano peppers (optional )
1 large cubed Russet potato
3 large garlic cloves
1 tsp whole cumin
1 tsp peppercorn
4 oz Fideo (Vermicelli)
1 1/2 Tbsp Chicken Bouillon tomato flavor ( I like knorr)
14 oz diced tomatoes
7 C. Water
Salt as needed

I worked with this amazing older Mexican lady when I first moved to Houston. She could tell I was young and with out family. She took me in as her own. Treated me like blood. We would share lunch everyday. I would also bring her food from my culture and she did the same. This was my favorite meal from her. We are still friends till this day even tho I moved so far away. Thank you for this recipe ❤

My mom just died last month, she was 96, I remember all her meals, for many years she would get up at 4am cook breakfast for my seven siblings my dad and I , I can still hear her making her fresh tortillas three times a day , this dish reminds me of her cooking thank you

The first time I ever ate fideos was at Mrs. Lopez’ house way back in the early 80’s. We laid her to rest today at 93 years young. RIP mama Lopez.

My Grandma made this dish when I was a young boy. I'm 66 now n till this day I still luv it. My sister makes it now n I enjoy it still . Back in the 60s. Lots of home made dishes. No restruant would top this dish. Thx for sharing.

Oh my gracious, you have made the most delicious looking meal. It is so amazing how we remember our mother's cooking. I also remember my Abuelita's cooking. We learned from them and that's how we learned to cook. What great memories, smell, and taste from our passed loved ones.

This is real food. I remember visiting my grandparents in Mexico at their Rancho when i was a kid back in the late 70's. I just enjoyed how they made absolutely every meal from scratch. Its a fact that Mexican foods aren't the healthiest, but its made with no preservatives and artificial flavors. The people from Rancho farms have been known to live well past 85 90yrs.

I love almost any soup or stew recipes. This is so comforting. I eat soup even in the summer months. Regarding celery: I think it is grossly underrated. I love tons of crunchy celery in egg salad or tuna salad. I’ve never made veggy soup without celery? And yes the leafy parts are very flavorful. I can’t believe some people trash them. I have some vermicelli in the pantry and now I know what to do with it.

I agree, celery is a must in soups and chicken or tuna salad. And it is so good for you. It has a lot of good fiber and lowers your blood pressure. And it's a natural diuretic. It is very underrated.

Senora you are making all these didhes with love! I just lost mom in 2022 and she made so many of the same dishes that you make almost exactly. I love the way you speak about yourom often in your videos, as mypm spoke of her mother often and fondly as well. She told me when you do so your past loved one's never truly pass because when you speak about them so frequently the new generations know who they were and how important they were in the dynamics of the family. We are Latinos from Arizona, 4thbgen Sonoran. My m and dad passed 2 days apart and I'm the baby and miss them everyday and your video made me tear up and remember all the beautiful memories I have with her in the kitchen, cooking for the people she loved, and made sure her only daughter learned the way of the familia. Nothing beats the smell of homemade corn tortillas! When my sisters and I would get off school bus after school, we could smell the aroma of corn tortillas. That made me and my sisters run home after a long day at school.

Because of you and your love for fresh ground spices I ordered my Molcajete. I thought my mortar and pestle was good enough but I wanted to compare them. Once it arrived and I began to season it, I thought I’d never finish but I did and it is an amazing kitchen utensil, wow! My first thing to cook was your beef tamales and EVERYONE raved about how good they were. I did make enough to freeze some. Instead of taco Tuesday we had Mexican Monday with some of our kids and grandkids. You’re an amazing teacher, person and cook! Now I want to make this. This reminds me of the food my mom use to make. She was also creative with the food. Since she had 9 kids. So she had to make food that she could be able to feed all of her kids. I live in Alamogordo, New Mexico. 100 miles north of El Paso, TX. My co-worker was telling me about making Fideo one day. She said it's a filling, hearty meal when money is low. She didn't give me the recipe because her grandmother taught her from memory. I'm going to surprise her with a small pot of this next week when her husband will be on a trip. Rachel is an awesome recipe mentor. Love the techniques and new ideas which remember the olden days. I tend to get in a cooking rut. Taking the time to do the extra steps to keep it fresh and authentic makes all the difference. My sister was a chef and always had a lovely graden growing in her yard. Rachel, I’ve been following you for several months now and I feel as if we could have been great friends. Your recipes are very, very similar to my mother’s recipes. As a child i was in charge of making something out of not much..this is one of my dishes. i made dinner for 14 at least.i would watch my older sisters cry cuz they had very little to work with😊 this is where my dad showed me how to Bank in.lets just say my high school cloths came from catalogs they ordered from😊 Awe memories❤

I love it. Its perfect for us Latinos who don't speak Spanish but understand it and then have trouble with translation from Spanish ingredients to English. Omg..the end so mouthwatering. My mom makes Fideo but this is a new twist.

To this day still one of my most favorite meals! Amiga, you took us totally back to our childhood as it truly was a treat when you'd get home from school and see that this sopa de fideo was what was for dinner. With some fresh homemade beans on the side and fresh tortillas, we were in heaven. This is truly Mexican comfort food at its best and you my sweet Rachel are queen of delicious comfort food. As we begin to feel the season change, may you and your Ron have a great big giant beautifully blessed week. Always sending you tons of love my dear friend.

Rachel, I just can’t WAIT to make this for my family! It looks like comfort food for certain. And I love to make my own tortillas, so it’s gonna be a new favorite in our house too, I’m certain. Thank you so much for sharing your mother’s recipe with us. I was a latch key kid and I always spent my afternoons alone. I like having time to myself, but I can only imagine what a joy it was for you to come home and be met with such a loving meal. Truly, I’m so grateful that you shared your history with this dish, as it makes it just that much more special to me. I look forward to making this for my grandchildren when they arrive. My beloved Son in law is Mexican and has a very traditional mother who cooks everything from scratch. I want to be able to contribute as well, and I thank you again for helping me plan. Rachel my mother fed a family of 10 kids, herself and dad with a little meat and lots of beans, calditos., and homemade tortillas! This recipe was very similar to mom”s. I love watching you and learning from you. May God continue to bless you. Saludos de Nuevo Mexico!
