The gray-haired guy wearing a neck scarf who told Sydney, "you have to make sure that your hospitality and service is overwhelming" is a real Chicago restaurateur named Donnie Madia, and the scene where he's talking to Sydney was filmed in one of his restaurants, avec (spelled in all lowercase). A few of the other spots on the episode are real Chicago restaurants as well.

I knew it. I could tell from how they talked that they weren't acting. It's always great when we get real life professionals in film and TV. They just carry an air of authenticity which boosts a show.

Sydney's montage was the perfect way to show what a creative process looks like, getting inspiration from shapes, food, music, the streets, the city she lives, her past, trying patterns, breaking patterns, throwing everything onto the plate, being minimalistic, it's a try and error process that happens so much in our heads, and when someone sees the final product they believe the artist only had that final idea in his mind

I got so mad at Carmy that he bailed on Sydney, I was yelling at the TV "dude fucking FOCUS"

True but if you remember from the beginning in the meeting he said everything at 5:10 He said if you could provide himself some type of enjoyment or amusement then he'd be able to be there for others. But he also said he was waiting for the shoe to drop cuz it always drops. Unfortunately that shoe was Sydney. Then he should have communicated. But he was still grieving for Michael and that enjoyment took him away from his pain for a little bit. Which is why I believe he dropped the ball.

I really enjoyed the editing on this episode, especially Sydney's food odyssey. I never thought about the creative process that goes into fine dining and somehow production managed to do so through solely the visual elements which I find very impressive. Editing is the one art form where I only notice it when its done exceptionally bad or exceptionally good. This was exceptionally good.

Really, Carmy set himself up. He was the one who said the 18 months to pay Cicero back, when he could have said 3 years. This made it where the whole team has to be on this condensed timeline to open & it made everything more overwhelming and more stressful than it needed to be. I also noticed that it seemed that he felt obligated to help Claire, even though he knew he had to get the menu together (and call the fridge guy). It wasn’t that he couldn’t have a life outside of the restaurant, he made it seem as if he had to choose between one or the other.

richie has a great episode in this season. they are really great at showing peoples traits/past issues & growth in a super organic way

One issue I had with Sydney hanging out with her peers and they're giving her side eyes when they're asking if her partner is trustworthy; none of them ask "Who are you working with?" I guarantee you if they did and she said: "Carmen Berzatto" they all would have shut up and not second guess everything.

Well, one of the chefs does mention that she’s Carmy’s sous chef, the guy in the blue hat, so I think they all knew who she was working with.

Like your videos, as always. Im not sure how youtube friendly it would be but I think that it would have been nice for you to talk even more about creation, more specifically when you feel that you're stuck in your solo creative process. I feel like thats what Sydney was going through in this episode anyways, trying to solo it but banging her head on the walls and I like to think that we've all been through this. I wanted a longer outro damn it 🤣Anyhow, im sure this show will give more opportunities to talk about creativity and how it can, at times, sooth the mind, while at other times, torture it. Finally, never considered ambition in relation to stress which in turn affects creativity, but it totally makes sense.
