There is life before and after you have filter coffee. Once you have had great filter coffee, it is nearly impossible to go back to instant coffee. Coffee is a complex subject where every little thing matters--the type of coffee beans (Robusta or Arabica), where it is grown, how it is processed, how it is roasted, how fine or coarse it is ground, by which method it is brewed, at what temperature, and so on. But in this episode we are keeping things simple. This is meant to be an introduction to real coffee--using a basic South Indian coffee filter and how to use the coffee decoction to make a cup of coffee at home.

Just a tip.... First add little water to the grounds.... Let it steep in .... Then add the remaining water.... It really enhances the flavour...

I love how you guys embrace cuisines from different communities living in Kolkata, all you recipes are not strictly "Bengali". Unfortunately there is a lot of regionalism growing in India these days. I wish everyone could absorb and appreciate other cultures this way instead of creating "us" and "them" divisions.

Yes regionalism is good in a certain way u know . When u visit kolkata , the main item should be bengali not gujrati not south indian not Maharashtrian because they have their own places . If u dont want to enjoy the ethnic particulars of different places then why at all visit those places. And kolkata has many different types of cuisine but if u visit kolkata obviously u would want to have bengali food and then maybe any other cuisine because that Kolkata's identity .

​@@sabbyasachimajumder8791this only holds water this would be true if there was no good or famous bengali food available in Kolkata. But thats not the case. Arguing for regionalism should be about nurturing the good parts of your regional culture and cuisine, not about putting other regions down. Also, if you go to a metro city in India, you will find enough decent Bengali restaurants as well. That's what it means to live in a metro city - there are different communities all living together so there will inevitably be a variety of cuisines as well. Bengalis have always been adventurous eaters and food lovers, so naturally Kolkata will embrace this variety more.

We went to Araku Valley few months ago & we brought coffee seeds from there. But the same problem we faced as it is not prepared like an instant coffee. So now I know how it is to be made. Thank you. Will show this to Maa & buy Coffee filter 😊🙏

Inspired by your video, when i went to secunderabad, i searched a whole day for the best coffee filter and freshly ground coffee. I found a shop where he had his own factory like coffee beans roasting machine and a big grinder which literally looked like an atta chakki. He ground the beans in front of me. Then after i made the decoction, the coffee was delicious and strong. A whole new experience. Usually instant coffee tastes bitter if we add it a little more. But this coffee won't taste that much bitter, yet it will be strong.

A treat for the coffee lovers! Detailing, photos, animation - on point! Appreciate na kore thakte parlam na. Was enjoying this amazing video sipping in my morning coffee. I was not a coffee fan, as you know in Bengali homes sokal maane ek cup chaa. Coffee was kept for the winter days & that only means instant coffee. Being married to a Telugu for a year now, I can understand a good coffee now. Mornings at my in-laws start with this amazing filter coffee (the first variation you showed) served in those small steel glasses. In our home, we grind coffee beans fresh everytime we want to brew -be it in a Moka pot or coffee maker! Kudos, you guys!!

What a coincidence I just got a small jar full of coffee powder from my colleague's own coffee plantation and now I found this video 😍😍. I also have the coffee filter too but was not able to make coffee perfectly till now. May be after watching this video I can make a better coffee now.🤗

Seeing the way in which you prepare food, be it the kosha mangsho or filter kapi, is so soothing. Your videos are an explanation of the phrase-Cooking is an art. Watching both of you, your videos is so peaceful and satisfying, apart from the dishes which make my mouth water, I frequently watch your videos and it's been +4-+5 times that I've watched almost all of your videos!

I am a Bengali but have lived most of my life in South India and everything I see the name 'South India' pop up in any video I just get really excited...so recently I bought some filter coffee powder and I know nothing about coffee. The first time I made it didn't taste good. After watching your video I learnt that I need a coffee filter :( need to go buy one soon. Don't want to waste my coffee... I loved this video. I cannot tell you how much I love this video. Everything about it is almost exquisite. It is the distillation of the Bong Eats aesthetic. The graphics, the music, the sounds, and of course, the visuals are top notch. I use this method to brew coffee fairly regularly and there is usually always some coffee decoction lying around for those times when I do not have enough time to brew a cup using my other favorite method, the pour over. BTW, I watch this video sometimes as way to simply soothe frayed nerves, particularly in these stressful coronavirus times. The only misstep is the mixing of tbsps and ml, which is surprising since one of the highlights of Bong Eats is the use of grams across the board for measurement. Hope you guys are doing well and I always look forward to more such videos.

Milk is as important as a good coffee powder to make filter coffee. Milk boiled for longer time is ideal to make filter coffee.

When I didn't have that filter , I used to just boil 2 tea spoons of filter coffee with boiling milk for 5 mins and then stain by normal tea stainer but with smallest whole stainers , thought sometimes a little bit of college powder left in lower portion of that cup , but it would in a very very little ammount , it was a great jugad for me in that time. And it's very fast process you won't even have to wait.

I am from Bangalore, and there we have many coffee bean selling shops where we can choose the proportion of chicory to mix with coffee bean powder. Many buy it even separate and mix it just before preparing coffee. When you don't have Coffee filter, we can still make filter coffee by boiling coffee powder in water and using the decoction...to make required coffee...
