-- RECIPE --
Add 2-3qt/L (depending on size of pot) of neutral oil to a large heavy bottom pot and heat over medium high until it reaches a temp of 350F/175C. Oil should only come halfway up your pot or less.
FREID CATFISH
▪2lbs/1kg thawed american catfish filets (sub tilapia)
▪100g or 3/4c ap flour
▪15g or 1.5Tbsp salt
▪5g or 2tsp black pepper
▪10g or 2tsp garlic powder
▪10g or 2 3/4tsp onion powder
▪5g or 2tsp paprika
▪2g or 3/4tsp cayenne
▪100g or 1/2c medium grind corn meal
▪100g or 2/3c finely ground corn meal (blitz medium grind in blender/food processor)
▪500g or 2c buttermilk (or sour cream and milk)
▪30g or 2Tbsp hot sauce
Cut filets on a bias so that you have pieces that are roughly the same weight. Set on a wire rack and salt both sides of fillets. Allow to cure for 20 minutes
In a bowl, stir together flour, 15g salt, black pepper, garlic powder, onion powder, paprika, cayenne, and corn meal.
In a separate bowl, stir together buttermilk and hot sauce.
To bread the fish, drop each fillet into the buttermilk mix to coat. Drain off well then drop fillet into dry mixture and coat well. Toss back and forth in your hands to remove excess batter.
Carefully lower filets away from your body into preheated 350F/175C oil, frying 2 at a time, for about 4-5 minutes flipping filets over halfway through. Fish is done with it’s crispy and golden brown. Transfer to wire rack or towels to drain why you fry the rest.

HUSHPUPPIES
▪65g or 1/2c ap flour
▪150g or 3/4c + 2Tbsp med-fine grind cornmeal
▪8g or 1/2Tbsp salt
▪10g or 2tsp baking powder
▪10g or 2 1/2tsp sugar
▪2g or 3/4tsp cayenne
▪75g or 2/3c onions, small diced
▪25g or 1.5tbsp melted unsalted butter
▪1 egg
▪200g or 3/4c + 1 1/2Tbsp buttermilk (or milk + sour cream)
For the batter, whisk together 65g ap flour, med-fine grind corn meal, salt, baking powder, sugar, cayenne, onions, melted butter, egg, and buttermilk.
Carefully drop large spoonfuls of batter (working in 2 batches) into hot oil and fry for about 2.5 minutes, flipping over halfway through. Puppies are done when they’re crispy and dark golden brown. Remove from oil and drain on wire rack.

SPICY MAYO TARTAR SAUCE
▪100g or 1/2c mayo
▪75g or 1/4c ketchup
▪30g or 2Tbsp hot sauce
▪20g or 1 1/2Tbsp yellow mustard
▪25g or 1 1/2Tbsp lemon juice
▪15g or 3 1/2Tbsp worcestershire
▪25g or 2.5Tbsp shallot
▪1 garlic clove
▪3g or 1tsp paprika
▪3g or 1tsp black pepper
▪3g or 1tsp salt
Spin ingredients in a food processor until smooth.

When I moved away from PA (where the traditional "Friday fish fry" was beer battered haddock) to Arkansas, I'll admit it took me a while to develop an appreciation for the catfish and cornmeal style prevalent around here. Now though? Absolutely adore it. Thanks for giving it its proper due respect!

BRI. Growing up in rural Missouri, a fish fry was the quintessential summer celebration meal. I had one for my high school graduation party. Usually with catfish your brother or your dad caught fresh and fried in a big ol pot in the garage while mom made hush puppies and potato salad inside. Mom wouldn't fry fish inside because "it stinks" 😅 There's also a restaurant near where I grew up called The Catfish Place that serves bone-in fried catfish

Finally, someone who knows what's up with Corn Flour rather than just saying "yeah that just means corn starch". Learned about it from a friend who was a cook in Louisiana and it's great! And thank you for the hushpuppy recipe, been forever since I've had those!

My grandma used to grate the onions for hushpuppies and strain off excess water from them so it didn't loosen her batter too much because she didnt like chunks of onion, but wanted the flavor

Growing up I lived at a lake in Missouri (KC side, not STL), and during the summers I pretty much lived on catfish, crappie, bluegill, and the occasional largemouth bass that me and my buddies caught ourselves. We never used hot sauce in the prep for breading, but I'm gonna have to give it a try. We usually didn't make hushpuppies, but fried potatoes and onions, and morel mushrooms if we could find them. Food of the gods....good stuff!

I just listened to a podcast by Adam Ragusea and he recommended your channel. I am so glad I did! I love catfish and, until the milk in the hushpuppies I once ate caught up with me (allergies), I really enjoyed them too. Now I can make my own! Happy dance! 💃 I add a tablespoon of lemon juice to a cup of non-dairy milk to replace buttermilk in recipes.

I never fry anything and have only had catfish a couple times, and this is still probably my favorite video of Brian’s so far. Super informative, super easy to follow, super well-produced, and it makes a super tasty dish! Very nice.

I needed a quick meal for Lent. I had frozen fish fillets and fries, but I made this spicy tarter sauce. A few mods: Used homemade hot sauce. Didn’t have a lemon, so I used fresh lime juice. Chopped garlic and shallots very fine, rather than blending. Turned out amazing. I may never buy tarter sauce again. Thanks!

Brian, I have a recipe suggestion for you that I also made on the hummus video. It's a popular street food in Israel that's pretty easy to make and has an awesome flavor. Sabich (ch read like the _h_ in hummus), an Iraqi Jewish dish consisting of a pita filled with strips of fried eggplant, hard boiled egg (I recommend boiling it for several hours! It makes for a brown egg with a more complex flavor), salad (usually chopped tomato, cucumber and onion) + parsley, tahini, amba (a sour/salty condiment made of mango) and possibly some chili pepper condiment of sort if you want it spicy. It's probably very little known over there but I highly recommend it.

I used to work in a fish-fry joint, and these are good recipes; very close to how we made them. Also the Hush puppy recipe is almost like my corn bread:... 1 cup of corn meal, 1/3 cup of ap flour, about a 1/2 teaspoon of salt, 1 or 2 teaspoons of sugar, about 1 teaspoon of baking powder, about a 1/4 teaspoon of baking soda; then combine the dry mixture well; then mix 1 cup of buttermilk ad one egg together, 1 tablespoon of corn oil, and add the wet mixture to the dry mixture- until combined (do not over mix); Bake everything in a preheated cast iron pan(add some corn oil to the pan right before you bake it)- 400 degrees, 13-15 mins... caio darlings

This brought me way back to my childhood. You did start with "country ass Missouri style catfish". I will resist being offended by that. We prefer "country ass Missour-AH style catfish", thank you very much. You can call me "country ass" if you want, but then you have to pronounce the name of the state the way we do. All jokes aside, I used to go catfish fishing with my grandmother and her siblings. We'd fillet the fish we caught on the kitchen counter, blood and all. The dredging was heavy cornmeal forward. We made hushpuppies out of the dredge. But we also fried okra in the same oil. I have vivid memories of us eating the fried food with boiled green beans on the side. Very country, but also very satisfying.

I'm impressed you had so many hush puppies left! To add to the naming thing Swai or Pangasius is perhaps better known here in the UK as Basa, usually sold frozen but you can sometimes find it on fish counters.

Super secret trick if you have either really good knife skills or a deli slicer it's VERY VERY worth it to slice the fish thin so you have more like a pounded cutlet thickness. The really thin breading on southern style fried fish benefits greatly from not having a super thick steam machine inside of it

For homemade spicy tartar I do an even mix of relish and minced banana peppers, along with the mayo. Onion and garlic powder can work nice with some smoked paprika, if that's your taste. Hope you like the idea. It adds some heat and a vinegar zing.

So being from North Carolina, we typically use Grated Onions for the hush puppies. It provides a better water content to help use less of the other liquids

I prefer to pan fry my catfish in smaller nuggets but this is good. I love catfish. I served it to a friend who doesn't like fish and he liked it.

Newbie here, terrific video. Now I know what swai is, pretty shocked at how expensive catfish has become. Originally from Florida, had lots of fried fish and hushpuppies growing up, usually the puppies went in the oil after the fish. That story of gathering up the leftover fish dredge, adding some water, cooking it up for the hungry dogs, y'all. Also lived in Iowa back in the day when catfish was the only fresh fish available. Lovely...

hey bri, im from the illinois side of STL, 25mi east. I highly recommend doing something with Blue Gill, a surprisingly tasty fish. Deep fry is the preferred method, my family recipe: Andy's white AND yellow batter 1:3 white to yellow. single batter and fry. some markets over here will sell blue gill, but usually mom and pop shops, so may have to call around. We usually just fish for ours lol.

Love all of your videos. Just had to tell you that I made your Tiramisu going on 3 times, next week will be 4. I made it as a dessert for Thanksgiving because my mom loves it, only ever had Olive Garden's version, which I didn't like. But I made yours and it was a big hit. Hey bri, ever tried frying batter of besan(gram flour). I've never tried using corn meal, we usually use gram flour batter for frying fish(fish pakora) at home and we definitely have a lot of vegetables coated in it as well (veg pakora). Ps if anyone couldn't already guess, I'm from India

The most important part of why to salt the fish is it draws out extra moisture which helps to prevent sogginess.

hey my gram makes hushpuppies she "blanches" her onions. she pops them in the microwave for like 45 seconds to "precook" them a bit. I don't know but it might be something to look into for cooking onions with adding any color to them.

Onion granules/powder is crucial for hushpuppies, and old bay in the fish batter; at least for a north carolinian. also I didn't even know catfish was sold at supermarkets. I've never had any that wasn't caught by myself, family or friends. You should take up fishing Bri, I think you'd appreciate the zen it can bring; but mainly because I could imagine you in waders, flannel and a fishing hat adorned with bobbers, hooks and lures and kind of want to see that. I honestly get a sense of deja vu when I do imagine it, and I can't explain why that is.

Anyone who "doesn't like fish" but isn't distinctly allergic to fish, should try fried catfish. I grew up in a small community in the midwestern USA comprised of 7 Germanic colonies (shoutout it out if you know what I'm talking about) that throws a 4th of July potluck "party" every year at the local park. Said "party" was where I first tried - and fell in love with - fried catfish, as well as any other form of fish other than the pre-fried fish sticks in a yellow bag. It's juicy, but not slap-you-in-the-face fishy, and flakes apart with even the lightest touch once you break through the shatteringly crispy cornmeal crust. I acknowledge that I, as an Iowan, do not have the best access to the freshest fish, and am experiencing a distinctly lower-quality product than someone who lives in a coastal state, but that should give you all the more reason to believe that you *have to* try this. The B Man's recipe successfully made my mouth water, even straight after eating lunch.

Oh man I'm not southern (born bred and spent my whole life in New Hampshire ... insular as all get out 😂 ) but I used to catch catfish (we call 'em hornpout in Cow Hampshire) in Lake Winnipesaukee when I was a kid and we would fry 'em up and it was the best. The real fishermen were going for trout and bass but we loved the catfish!! I'm definitely gonna give this recipe a try!! Up my catfish game!

I can't believe catfish costs that much now. Growing up down south we ate a ton of it! Along with fresh seafood (we lived on the coast) and crabmeat from crabs we caught ourselves on weekends--all what my father used to call "poor folks food." How times have changed ☹️

I was about to say that your “spicy tartar sauce” sounds suspiciously like comeback sauce. My go to dipping sauce for catfish and fried pickles, but really it’s good on everything…even salad.

Hello, thanks for this video. Cat fish is not commoon/ inexsistent over here, but we have plenty of other varieties of fishes to fry, I'll go with it. What is the "hot sauce" made of ? Sriracha ?

Looks good! The thing that has me triggered is when you take the food from the hot oil you should have your resting tray on the stove so you’re not getting oil on the floor and your Birkenstocks. With peace and love ❤️

HUSH PUPPIES! Yay! V excited for this one. Also, I love that you are using catfish. I actually make your etouffee dish nearly weekly (my family absolutely loves it, as do it!), so we pretty much always have catfish on hand.
