Our friend Michael shows us how to make Fish Head Soup Jamaican Style! First he cleans up the carcass, then he washes it in lime juice and water, then he boils the carcass in a soup pot and pulls out the fish after 10 minutes, next he starts adding dumplings and some vegetables, and then he adds the rest of the vegetables. After a couple hours he adds the fish meat and we have an incredible meal!

Good on you, Michael! Introducing people to food they've never had before is a beautiful thing, especially such healthy grub. I've had fish head soup ever since I can remember. My great-grandma's recipe is bomb. She was an immigrant from the Bahamas. I'm always amazed when I meet fishermen, who've spent their whole lives on the water, yet have never had fish-head soup. Or those who've never eaten fish any other way than deep fried. It actually brings a tear to my eye when I see folks just fillet and then fry all their fish. It is a sad, sad thing to witness. There is so much good meat on a fish carcass, and the fish skin itself is very good for you. I prefer scaled and gutted fish to fillets. Even whole fried fish is better than filleted and fried.
