Easy, Healthy & High-protein Meal Prep😍💪🏻 In this video I meal prep healthy breakfast, lunch, snack, dinner and dessert that get you 100G protein per day! All the recipes are gluten-free, easy to make and so delicious!
I’m meal prepping for three days this time. I meal prep lunch, dinner and dessert for both my boyfriend and I, and then breakfast and snack just for myself☺️

BREAKFAST
Strawberry Chia Pudding Parfaits
I used nonfat Greek yogurt in this which contains 13g protein per 100g. You could also use quark, skyr or protein yogurt!☺️
For one serving you need:
For the chia pudding:
2 tablespoons chia seeds
1/2 cup milk of choice, I used almond milk (120 ml)
1/2 - 1 teaspoon maple syrup
optional: 1/2 teaspoon vanilla extract
For the strawberry yogurt layer:
3/4 cup (lactose-free) nonfat / low fat Greek yogurt (180 ml / about 200g)
1/2 cup strawberries, I used thawed frozen ones (120 ml / 80g)
Toppings:
gluten-free granola (recipe below)
1. Mix together all the ingredients for the chia pudding in a jar
2. When the mixture is well combined, let it sit for 5 minutes and then mix again to get rid of any lumps. Let set in the fridge for at least 2 hours
3. Once the chia pudding is ready to serve, make the yogurt layer and spoon on top of the chia pudding. Add the toppings and enjoy!
Recipe for the granola (this makes extra)
2 cups (gluten-free) oats or buckwheat flakes (480 ml)
1/4 cup melted coconut oil (60 ml)
3 tablespoons maple syrup
2 teaspoons vanilla extract
2 teaspoons cinnamon
1. Mix all the ingredients together.
2. Spread the mixture on a baking pan lined with parchment paper.
3. Bake at 180 Celsius degrees (350 in Fahrenheit) for 20-25 minutes
LUNCH:
Noodle Soup Jar
For one serving you need:
1 tablespoon (gluten-free) soy sauce
1 teaspoon garlic infused olive oil
1 teaspoon sesame oil
1 teaspoon vegetable bouillon (I used powder)
pinch of chili powder
3.5 oz. / 100g shredded chicken breast
1 small shredded carrot
1/2 bell pepper, diced
spinach, to taste
rice vermicelli noodles, to taste
1. First add the soy sauce, oils, bouillon and chili powder to the bottom of the jar
2. Then add the shredded chicken, carrots, bell pepper, rice noodles and spinach
3. Cover with a lid and store in the fridge
4. Bring the jar to room temperature ten minutes before adding the hot water
5. Add hot water and stir. Let sit for 5-10 minutes, until the noodles are cooked
SNACK:
Snack boxes
For one serving you need:
2 boiled eggs
handful of nuts of choice
cherry tomatoes
mini carrots
green grapes
DINNER:
Warm Quinoa Feta Salad
This makes about 6 servings
For the roasted vegetables:
3 bell peppers
2 zucchinis
1 broccoli
2 tablespoons olive oil
Pinch of salt
For the roasted chickpeas:
14 oz. / 400g chickpeas
1 tablespoon (garlic infused) olive oil
2 tablespoons paprika spice
1 teaspoon salt
Pinch of chill powder
For the salad:
2 cups uncooked quinoa (480ml / about 400g)
7 oz. / 200g (lactose-free) feta
Dressing:
Handful of parsley, chopped
juice of 1 lemon
2 teaspoons of dijon mustard
4 tablespoons (garlic infused) olive oil
Pinch of salt & pepper
1. Wash and chop the vegetables
2. Spread the veggies onto a baking pan lined with parchment paper
3. Drizzle about 1 tablespoon of olive oil on top and stir. Add a pinch of salt
4. In a bowl mix the rinsed chickpeas, olive oil and spices together
5. Spread the chickpeas onto a baking pan lined with parchment paper
6. Bake the veggies and chickpeas at 200 Celsius degrees / 390 in Fahrenheit for about 20 minutes
7. Rinse the quinoa and cook it according to its packaging
8. Mix all the ingredients for the dressing together (or use a store-bought dressing)
9. Then add all the ingredients into a container and stir to combine
DESSERT:
Chocolate Peanut Butter Oat Cups
This makes about 6 servings:
For the oat peanut butter layer:
1 cup (gluten-free) oats (240 ml)
1/3 cup unsweetened peanut butter (80 ml)
3 tablespoons maple syrup
For the chocolate layer:
2.5 oz. / 70g 80% dark chocolate
1 teaspoon coconut oil
1.Mix the oats, peanut butter and maple syrup together
2.Melt the chocolate in the microwave with the oil
3.Divide the mixture into 6 muffin liners and press firmly
4.Top with the melted dark chocolate. Let set in the freezer for 1 h
5.Store in the fridge

A few months ago I searched “low calorie healthy meals” your shorts were one of the first to come up(I’m almost 15) I’ve been trying to loose weight cuz I’ve been overweight my whole life and I have no self confidence in myself so I’m trying to get that and your recipes have rlly helped in January I started at 181.5 pounds and now I’m at 162.0 pounds. I made my own version on the peanut butter chocolate oat cups. They were so good I used monkfruit sweetened maple syrup and instead of coconut oil and chocolate I used coconut butter and 70% chocolate and instead of regular peanut butter I used the powdered fit peanut butter! They are in the fridge I’m super excited!!

Selma, you have the best recipes! Friday night is our take out night. My husband & daughter always share a pizza. I have reflux so I get something different. Your soup in a jar looks so delicious so that’s what I’m going to have tonight. I also wanted to say I really appreciate that you shared your experience with counseling. I lost my best friend the beginning of January. We were best friends for 50 years. She battled cancer for 3 years & seeing all of the problems she experienced along the way, I was very scared that she was not going to make it. I spoke with my family dr about her a few times & when I asked him for a referral for a counselor (before she passed away) he told me that people grieve in different ways & times & since she had been sick for a long time I was grieving beforehand. My counselor said it’s anticipatory grief. I stated seeing my counselor in Nov & it’s been very helpful. It takes a lot of courage for you to share your experiences & for myself it gives me that feeling of I’m not alone, there are others that are struggling. Maybe a different problem, but still willing to seek the help they need & share it to encourage others. Thanks again & I hope life keeps getting better & better for you.

And I’ve been so fortunate that my therapist is amazing. I’ve gone to therapy before & had good experiences with it. This time it’s even better, because the therapist I’m seeing is really wonderful. I felt so comfortable with her right away. It reinforces to me how important & helpful counseling is. Thank you again, you’re a very compassionate person.

Love these videos! They really inspire me with my healthy eating. Just curious how do you pick out recipes? I usually find mine online. When do you also generally grocery shop? Would also be helpful if these could be posted on Sunday!

Thank you❤ I do find some inspiration from social media for the recipes and then I make my version of them☺️ And some recipes I just come up with myself, often I get ideas from what my mom used to cook when I was younger or what I have tried when traveling😁 Often it’s just trial and error, some recipes work and some don’t🙈 I usually buy the groceries on Saturday, just that I can start filming the meal prep video on Sunday morning, because I only use natural light in my videos☀️ If I wouldn’t film, I would probably go buy the groceries also on Sunday and then do all the meal prep😁 The reason why I share the video on Thursday is just that it takes a long time to edit the video, do the voiceover and write down all the recipes☺️ I also think it’s useful for everyone watching so then they can take inspiration for their next week’s meals and have enough time to get groceries😁

Hi, thank you for these delicious recipes, I just made the quinoa salad and the Noodle jar (though I swapped the bell peppers to bean sprouts and added some home-made kimchi to the soup as a personal preference). FYI. I’ve made oat bars like that before and maple syrup never made them stick together. I’d recommend honey honestly to anyone who is thinking of making them. 😊

I got them from Amazon☺ I just searched for 'glass jars with bamboo lids'. Are you able to eat almond or hazelnut butter?😁 Sunflower seed butter works too😍

@verneshial684 my granddaughter is very allergic to peanuts too. Her Mom & Dad found a product that she can tolerate. It’s called Barney Butter. In the store, we find it in the peanut butter area. The first time I used it, I made some protein bites & everyone liked them. Her brothers play a lot of sports so they’re trying to bulk up some, through exercise & eating well. I have 3 grandsons, twins (my granddaughter’s who is 17 & her brothers 15) & my other son & his wife have 1 son who will turn 11 in September. I love making goodies for my grandkids! I love to cook & bake, especially for my family & special friends,
