yes, beating the eggs generates great amount of froth which has a lot of air/oxygen, which while cooking evaporates slowly, ensures even micro-steaming/cooking and makes the omelette fluffier (yes, it makes the resultant omelette more fluffier, not the eggs!!) and softer, more tasty... and all this information comes from a die-hard vegetarian like me, ha ha ha ha 😂😂😂.

It's way easier if you just beat the egg whites with an electric mixer and then add the yolks. That's how we make the egg for the Chile rellenos (stuffed poblanos) in Mexico. When ever we have extra egg left we just make it into an omelet.

For people complaining about how much time does he take Firstly, he might be making it slowly and carefully as it's being recorded. normally they make it a lot faster Secondly, if y'all wanted to complain about his egg beating yall can leave the phone rn and try making a fluffy omelette.
