For the sauce you need 8tbs mirin 4tbs sake 8tbs salty soy sauce 1tbs brown sugar 1ts sesame oil Boil to a syrup-like consistency

You didn't need to fan the yakitori. In cooking mama they represented how they cook some foods in Japan. They don't use a nonstick grilling plate with regulated heat like yours. They use an actual grill with coals in it and fanning it keeps the heat high on the coals so the food cooks quickly.
