Your diet is so important. What blows my mind is how much sugar they put in everything. I stopped getting processed food years ago and I feel so much better. Glad you are taking care of yourself Scott.

Hello Scott, Love watching you meal prep. You have the smoothest narriatives. You have a system for everything you do. So authentic and transparent. Don't see enough of that on you tube because so many channel owners glamorize van life. It's hard sometimes to find small packages of meat. If I go directly to a meat market I can buy portion sizes. I find that switching out deli and bakery items helps eliminate appetite fatigue. I like to cook outside the van when I can find a park with a pavilion. Enjoy.

I grew up not far from Olvera Street and really enjoyed the Taco stands there regularly, food was delicious , but it looks like you've made yourself some tasty Tacos yourself 👍 always enjoy your cooking segments😊

I'm with you on the mandoline. I do have one. For slaws, salads and especially kimchi veggies it is so quick and produces very consistent delicate thin slices. But terrifying to use and clean😁

🌄☕🌮Enjoy so much your cooking programs of van life. Your not being in a hurry up rush reminds me that its fine to take my time... My son is like that and I find our cooking times together more so enjoyable. I do the prepping and thankfully he then takes over giving my health recovery a boost. 🌮☕🌄

Looking good and healthy , Im working on lowering my bp and cholesterol while cooking in my van and yes eating healthy is expensive $6 for a dozen of organic eggs, yum❤ I'm enjoying your videos, I fell asleep to the rainforest❤

Hi Scott, I attach my cordless drill onto the crank shaft of my bean grinder rather than use the manual crank handle. It's a lot quicker, easier and effortless. You may want to give it a try.

I need to look for those tortillas the next time I'm at Trader Joe's. I'm allergic to all sorts of ingredients and need to start paying closer attention to ingredient lists. I've recently discovered that red food color, which is in so many products, triggers bad inflammation in my back. It's just trial and error for me. You are fortunate to have found a doctor to help guide you to the proper diet.

Those tacos look super good!!! When I buy taco shells at the store already shaped, that must be an imitation of the way you made crisp tacos. I’ve never thought of making a soft shell crispy. I’ll have to try it.

One thing people don't know is that without a diagnosis the patient doesn't know what to do ( and neither does the doctor) . I think it is a talent that not all doctors have. Finding the doctor with the talent is difficult. My SIL is a retired internist and she really could figure things out. She literally saved the lives of some of my family because she could spot what was wrong. I have another friend with chronic debilitating fatigue. He's been tested for everything, Covid, Lymes' Disease, AIDS, allergies, mold, parasites etc. . His doctor of 30 years is totally mystified as to what is wrong with him.

Peanut butter might come in handy, too, if you. just need to scoop something into you or spread it on bread--to eat something fast if you're too tired or unwell to cook. Lots of protein, fat, and sugar. I'm amazed at how well you can cook in your van. God bless you, Scott. Stay well and safe.

Better than what we had. Hebrew National beef franks and sliced veggie platter with buttermilk ranch. Couple bites of Tillamook Vanilla for dessert 🍨. We will finally reach home tomorrow after a couple months in the TC. Take care.

I just discovered your channel. I watch a lot of van life channels and have never come across any from someone staying in the SF Bay Area so I was thrilled to see you are in Santa Rosa. I live in the East Bay (about 30 miles east of SF) and love Santa Rosa. Wish I could afford to live there! Those tacos look fantastic, and that crunch, oh my! I just found your channel yesterday and have not had a chance to watch very many of your videos but just wanted to say thanks for sharing your experience living in a van. I'm in the process of designing my minivan conversion for occasional camping (not to live in). Anyway, learning a lot from your experiences and developing a great respect for your perseverance. I'm sure you are helping many others who also live in a van regardless of choice or necessity.

Hi Scott- thank you for the food prep video❤ i try to food prep but it is difficult with a small fridge- mine is a smaller refrigerator but not as small as yours. Tortillas make a quicker meal if my beans are already made. I use a small rice cooker which helps because i can prep veges while it's going. But rice cooking is not fast. Not sure why potatoes only keep for a couple of days- i keep them longer in olive oil. Sometimes i put vinegar in with the oil and use as a cold dish.

I was prepping my burrito/taco mix when I put on this video. Roast up some corn, add onions, some chorizo, salt, pepper, garlic powder, tomato chipotle sauce, ground beef, dehydrated pinto beans (that soak up the fat), dehydrated hash browns (that also soak up the fat). I eat it almost every day, sometimes scrambled into some eggs for breakfast. Yeah, taking the time to prep things in advance makes meals much easier. And I chuckled when you talked about the knife. I had been thinking, "He used to cook for a living. Why doesn't he use a chef's knife for, like, everything?"

Hi, I live in Southern California and I just left Walmart and they had a big bend with 2.2 oz little bottles of hot sauce for a dollar a piece. They had Yellow Bird also. 2 different kinds. I bought my husband one to try. Maybe Walmart out there has them also.

Yeah, I've notice that you never eat peanut butter, allergic ? I agree, the shorter the ingredient list the better which helps to avoid any side effects. TJ stores, for the most part, are health conscious, the exception is their chip, alcohol and sweet-tooth sections. And there's a YT video by the late Huel Howser of Calif. Gold fame, on Olvera St. if you care to revisit.....Take care and enjoy your eats !!

Hello Scott how are in October 2023 my doctor told me I had diabetes type two now I have to write down everything I eat I am only allowed 45 carbs a meal it’s very frustrating I love food but now I have to watch what I eat I always cooked at home anyways so I am making chilli tomorrow in wraps with lots of veggies and cheese it’s going to be really good.I love your videos .here from Ontario Canada ❤️❤️❤️❤️🇨🇦🇨🇦😎

Hello, from Saudi Arabia. I’m actually Mexican American been living out here since 2001. I was on KZfaq looking for some Santa Cruz clips because my daughter lives out there in the woods by UC Santa Cruz and when I visited It I fell in love with that place. During my KZfaq search your channel came up and have been hooked on it ever since , I wouldn’t normally sit and watch a 40 minute KZfaq clip , but there’s something magical and simple about your videos that just keeps me watching till the end .
