This was one of the most important tips I learned when I first started using my stainless steel pans. Thank you for sharing this. It's important to know. Cooking on stainless steel is different than on non-stick. But you can make your stainless steel virtually non-stick if you use it the right way.

I love your tips, as most are terrific, but this one is wrong according to Chef Todd Mohr, Certified Culinary Educator and former professor at Baltimore Culinary Acadamy. He says to heat the pan until the drops of water immediately evaporate, then add your oil, and wait until the oil shows ripples, then add your food. You want the oil in your skillet to be just below the smoke point. If you get the drops skating around the pan (The Liedenfrost Effect), then your skillet is TOO HOT, and Olive Oil will smoke, causing it to get bitter.

Funny, I just finished scrubbing my stainless steel pan (which is *full* of stains from doing wine reductions), my arm is about to fall off. Then this video comes and saves the day. I’d still like to know how to get that skillet clean, if you’ve got any tips and tricks.

Put enough water to cover the stains, then add a tablespoon or two of white vinegar. Heat it up until hot, not boiling. Turn the heat off and let the water completely cool. Wash as usual. This works well for me. I get white stains when I simmer meats in my stainless.

I've also found adding baking soda to the pan after you've heated the water REALLY works well too remove stuck on bits. Of course in use a metal scrubby too.

Good tip. Another thing is not to use ANY soap to clean your skillet. While it is still hot, put water in it and that helps to loosen the scraps inside. Use a non abrasive scratcher to scrub it. Immediately dry out the pan. I've had lots of success when not soaping it. Again, thanks for the tips.

Also, if you put a piece of meat already in it and its sticking after a few minutes. Cover it. Put it a smidge past medium line on the dial. No higher. See it cook around the edges like half way. Then turn. The fat from the meat will release the pan naturally. If you try to turn it before that time. It will stick, tear or crumble
