If this hasn't been sped up any then they have one insanely powerful chiller under that cold plate. Very good technique, too. When your cold plate is powerful then you really need to crush your mix-ins quickly and get the ice cream mixed, chopped, and spread as fast as possible to prevent it from freezing too solid to roll.
