I have used it just before grinding. Does not need soaking. It gets fluffy with lots of pores. I do not think he has revealed the complete recipe. It needs some toor and chana dal for bottom to turn red.

Sir, thanks for showing the measurements only problem in the house is dosa thava & correct heat temperature. This is only for hotel use, because the thava cost is around ₹15,000/- .😂😂😂❤

In your house also you can prepare Davangere Butter dosa. Only with 6.5 mm thick iron tawa. Which I bought recently from Madurai . Available near Meenakshi Amman temple. With that thickness you can prepare golden brown roast dosa. It costs 650/-. Or else you can try that thickness tawa locally also. Thanks.

I have got sengoti kallu from zishta who charged me Rs.2;500/- about two years back, very heavy to handle. I hv got heavy burner also, but not to the hotel std . Zishta hv introduced bronze dosa thava, hand made Rs.6,000/-.
