I am completely impressed with how Southerners have used meat, fish, veggies, greens, etc. to make edible meals... mostly with a lot of prep, cooking, etc. Bravo!

Most “southern” cuisine like you’re referring to originated from African-American enslaved folks’ culture, as they had to find ways to make the (literal) scraps left for them to eat into a satisfying meal. That’s where southern dishes like chitlins, ham hocks, gizzards, turkey necks, oxtail, etc. come from. Notice these are “leftover” parts of livestock post-slaughter. *The more you know* 😊

You got the difference between Cajun and Creole jambalaya!! (I’m French Creole from Baton Rouge, Louisiana!! Born and raised) As a Creole woman that has been cooking in her kitchen, learned how to cook in her Creole parents kitchen, and her granny’s and grama’ kitchen for 40 years!! WE DONT PUT TOMATOES IN OUR JAMBALAYA !!

Then you’re making Cajun jambalaya. Creole tomatoes are used in creole jambalaya. It’s basically a sauce piquant with rice.

I love to try all food. But for authenticity I’m not going to get southern food in Canada. Ingredients, even if prepared by a southerner, would not be the same so the food would be different! Would love to try a wild hog cookout.

I’m from the south and I would absolutely never eat chitterlings. The gizzards and collards are absolutely amazing. Another great southern dish is Chicken Bog. Look it up. It’s hearty and stupid delicious

by far the hardest part of fasting is the boredom. If you've never done a multiday fast, you have no idea the enormous amount of your daily time is spent thinking about, preparing, or eating food. Depending on your lifestyle, it can be really hard to fill all that extra free time. If you want a fast to be easy, start it when you are very busy

My stepfather once lived in Savannah near a boiled peanut processing plant. Knowing how much they were a beloved treat for me , he often sent me huge cans of them several times a year! They are so great!

My homemade mac and cheese begins with a can of Campbell's Cheddar Cheese Soup. At least 3 more kinds of real cheese will be mixed in and go on the top before it goes into the oven. It's really good.

If you like a bacon sandwich and want to go veggie, try the Quorndon bacon slices version. Fry slowly for a few minutes in good oil to keep it moist and flavoursome. Don't overcook as it burns. 3 slices plus tomatoes and mushrooms in a bap, lovely 👍

In some parts of Mexico, we eat something quite similar to English Black pudding, but we call it Moronga and we use more spices and even make it slightly spicy and serve it on a warm corn tortilla with red sauce to go with it.

As a Canadian all the Canadian foods on this show are FANTASTIC!!! There's nothing like a Montreal bagel!! Or a plate of poutine! My mother makes a tortierre pie for Christmas Eve dinner every year. I've visited a maple sugar Shack in the eastern townships of Quebec and learned that maple syrup is excellent on eggs!!

Do not use Pillsbury for biscuits n gravy. You don’t want sweet biscuits for that. You can get frozen biscuit dough, use that if you don’t make it from scratch

For those of you who have issues with Wendy's chilli because they use leftover patties to make it, I have a news flash for you. Even fine dining restaurants use leftover ingredients for their soup of the day. Because of Wendy's limited menu, chilli everyday just makes sense. As close to zero waste is what you want in a restaurant. I've worked under two Cordon Bleu trained Chefs in my lifetime and have no delusions of the food service industry.

Don't knock black pudding just because the name puts you off. It's good. Don't think of haggis because of what you've heard of it, it's just a sausage and the less you know about how the sausage was made, the better. By the way, eat a hot dog. I've worked under two Cordon Bleu trained Chefs, don't be squeemish about strange food. You're just limiting your dining experience. If it wasn't tasty, it wouldn't be on the menu. Especially if it's a restaurant that caters to Western Culture standards. If it wasn't considered tasty, it wouldn't be on the menu. Don't limit your dining experience. Since you're writing in English, I'm assuming you were raised in Western Culture.

So their "south" is actually southern, deep south, southern plains, Texan, gulf coast, cajun, and soul food. Side note: funeral fluff is head and shoulders better than ambrosia salad.

I tried a southern style sweet potato casserole recipe this last year and it was a huge hit, didn’t even know I liked sweet potatoes no marshmallows 😊

Squirrel is so lean that it will get stringy if not cooked properly - low and slow. It is delicious or nasty, depending on the chef. Haven't had opossum but would like to try. Heard good things

My parents - French Creole, both sets of grandparents - French Creole, all of my aunts and uncles- French Creole, grate grandparents, great grandparents and my entire lineage are ALL FRENCH CREOLE and not a single one of them have NEVER called it “holy trinity”! We are also are Christian and hold our Faith near and dear to our hearts! The word Holy is reserved for God the Father, God the Son, and God the Holy Spirit because God has no rival! God has nothing equal! Certainly simple bell pepper, onion, and no celery is NOT equal to The King of Kings and the Lord of Lords!! I said what I said!

Chill out a little. Jambalaya is all things to all people. From a sausage or ham sauce piquant to a gumbo, it doesn’t matter, as long as it’s cooked with rice. Some even resembles dirty rice. As long as it’s made with love, it’s right.
