Super easy-to-follow, homemade cornflake recipe
Ingredients:
150g of fine cornmeal
10g sugar
10g oil
pinch of salt
1/3 tsp of bicarbonate of soda
80-100ml of water

Love this. Found your channel while trying to work out method(s) to recreate crunchy logs of Fru Grains (my dad’s favourite cereal. I’ve nearly got the taste right but haven’t worked out how to make them into those nuggets of deliciousness yet. After watching the whole video, I’ve done very similarly (albeit with vastly different ingredients) but think I’ve been too impatient and just need to bake gently for longer to evaporate the tiny amount of water left. 🙏🏼🤞🏼🙏🏼

Nice idea. But I think that would just dry them out and harden them, but it wouldn't bake them. Baking is needed not just to harden , but to also change the taste

What to do about parchment paper sticking to the dough?

Once baked, all the water should be completely evaporated, and the dough should release easily from the paper.

Use a pasta machine to get an even thickness.

A great idea, but the mixture is not stable enough to go through a pasta machine so thought a roller might work better. But our minds are definitely on the same page! Thanks for taking the time to comment.

@@FoodTech101 I meant that you still use paper, and roll it through with the paper on. You put a strip of corn paste on the paper, then you fold over the paper so that it overlaps on the middle, this way your paste wont get on to the rollers of the machine.

Your recipe looks good, but, they do NOT press the kernels into flakes. They are crushed by rollers to make corn meal and from there they make a dough which is eventually extruded and cut into flakes. Even the original ones were not made the way you described. They were created by accident after letting a bread dough rest too long.
