Dear John, I'm 55 years old now and truly love some of the simple but delicious dishes - such as creamy MASHED potatoes! Mr Fox, however is a little more fussy and prefers things "fried"! I'm hoping to make these baked goodies with a side of bacon and beans in the hope he'll not notice they weren't fried! 🤣😘Big hugs x

Hi chef John, I am kind of going through a rough patch nowadays and hearing your voice with the cheerful attitude and the dad jokes reminds of better times 😊 I really appreciate what you do and who you are, thank you for that! Love from Israel Yochai OMG! A year later and thanks to a notification on the last comment I got to see all of this amazing support! Just made these! My husband and I love them! Great with roast beef French and U.K. style with Yorkshire puddings. A nice light alternative to the heavier roast potato! Reckon they must be good with beef and any roast, any style! Definitely on our menu and on my ways to cook potatoes list!! Thank you so much!👍👏😊

G'day Chef John, Don't know how I missed this fantastic recipe/method. At my food trades' school, many moons ago, we kinda did the opposite and deep fried our Duchess Potato mixture when the instructor wasn't looking. We dumb kids thought we'd invented a new dish; but, as you know, there is no new thing under the sun when it comes to basic staples like potato recipes. Word got around and our instructor, with a totally straight face, gave us a lesson where we had to make Duchess mix and then deep fry it. He then trotted out some impossible to say French culinary term and, voila, he threw our little kitchen prank back at us and we all learned something that day... never try to out-cook your instructor, and instructors like to 'play' with their food as much as the silly kids they are teaching. By the time we finished the course we were great mates with all our instructors. 'Food Makes Friends'; a motto that should be adopted by the UN, NATO, ANZUS and any other organisation that is trying to bring about world peace! If we were all too busy enjoying each other's culinary histories we'd have no time for wars... all our soldiers would be too fat to fight! What a lovely idea. A friendly food tale in return: When I first moved to my home, the neighbors knew that a lady was living here alone and kept an eye out. When we had a big snowfall, the gentleman next door cleaned off my driveway with his snowblower. So I baked up a nice cake for him and his wife, and took it over. He told me his wife was snowbound at her sister's house in another county. The next morning I saw him, and he laughed and told me his wife was still stuck at her sister's, and he had eaten the entire cake himself. I was delighted he'd enjoyed it, and hurried to make him another cake. When I took it over, I told him he didn't have to tell his wife about the first one, when she got back.

I was inspired by this recipe and accidentally made the greatest thing ever. I call 'em "samosa puffs." CJ, if you see this comment in all the noise, you gotta try this: - Mash some potatoes. I kept it simple: potatoes, butter, salt, pepper. - Add some curry powder and (if ya got it) a bit of garem masalla to the mash. Rather tasty on its own! - Throw a diced onion, carrot, and some (frozen) peas into a pan. Season w/ curry, salt, pepper, and cumin. - Cook until carrots are soft and onions are translucent. Combine veggies w/ mash. - In the same pan (to soak up the leftover spices), make your pastry dough. I used the water left from making the mash. - Let dough cool, add an egg or two and a dash of baking powder, and combine with the mash. - Scoop into roll-size servings and bake at 450F for 25min. Serve with a mango or cilantro chutney. HOLY CALAMITY, it's so so good!

I made these for my family yesterday. So simple and so delicious! Thank you Chef John! This is a fantastic base as is but adding truffle and Parmesan would be amazing. Cheddar and bacon. Sour cream and chives. The options are endless. Thank you so much for introducing me to this. I know I’ll make them again and again. I wish you could have seen my family’s faces when they tried them. Utterly delicious.

I wonder how they'd be with a bit of chopped bacon or ham added in, along with some eggs whipped in, a full meal in itself! tried this recipe tonight. so good. I used a higher ratio of potato and it ended up nice and brown on the bottom, and creamy mashed potato in the middle. so good.

I made Chef John's "other version" (Gougeres) from years ago, I mixed in a ton of cheddar cheese and a "shaka shake" of Garlic powder and finely ground Rosemary into the hot potatoes and whipped them in my stand mixer, then added the eggs when things cooled down...5 or 6 years later, people still talk about me making those fresh at my buddy and his wife's Wedding Anniversary party.

It’s definitely its own speech pattern... how he only, says a few words, at once, and can’t say more, than a certain amount, at once. Having to pause, for the same amount, of time, without just saying, it all in one, sentence, kind of makes it, hard to listen, to.

It's annoying because it doesn't sound, nor is natural. It is some gimmicky voice he uses to brand himself with. I always turn the sound off on this guy and put on the subtitles instead. I've never heard anybody in my life talk like this. It's weird and not a soothing rhythm what so ever, lol The rest of the video is great.

@@adiscourse9489 Normally. most people's voice will go down at the end of a sentence. It' s called a falling pitch. But his voice rises at the end of each sentence. It bothers some but I love it.

Same here. I've got about 40 herbs and spices in a designated spot on my kitchen countertop. Obviously very small jars that need frequent refilling, but sometimes form trumps function.

To be honest, there are probably about 15 that get used regularly, another 10 that _sometimes_ get used in something, and the rest just kind of chill on the sidelines. This picture isn't the greatest because my under-cabinet bulbs are all dead. Gives you an idea of where my priorities are. imgur.com/gallery/BSjcpL6 Cayenne is in the second row back, all the way to the left. Front row left side is whole herbs (leaves), alphabetical. Front right is whole spices (non-leaf parts), alphabetical. Second row is powdered herbs and spices, alphabetical. Those first two rows all have labels. And the back is miscellaneous, primarily things that can be identified visually and/or things that are too large to fit in my impractical swing-top jars. The tall silver thing is the black pepper grinder. The jar with the blue lid is kosher salt. And the red jar is... well, empty, to be honest. I just like how it looks.

You can never, ever, have too many potato recipes. Watched a documentary once, with Anton Edelmann, Chef de Cuisine at the Savoy..... he hauled a hand-written book from under his desk, about 6 inches thick ...loose pages coming out all over. All of it, just ways of preparing potato.

It was about 30 years ago! .. I've been trying to hunt it down.. it was a 'day in the life' type, BBC? starting off with buying, a lot of stuff in his incredibly scruffy office.. runnung the kitchen.. I remember he demonstrated turned potatoes poached in clarified butter (!!) and souffle potatoes ... very old school..

I bet a dessert version of this with a honey butter glaze and dessert friendly spices would be awesome. Or maybe a sweet potatoes version with a dusting of powdered sugar.

@@LB-vl3qn You're quite welcome! I enjoy tweaking recipes. I love your topping idea for the sweet potatoes version! At first, I considered a marshmallow glaze with chopped brown sugar candied pecans (with the cloves/cinnamon, butter, and brown sugar added to the pureed sweet potatoes). Then I wondered if these toppings would be too heavy for the light and fluffy puffs and decided on the powdered sugar. But my mouth is watering just thinking about those toppings, and cutting into a hot steamy sweet potato puff and spreading a bit of cream cheese. Haha Yeah, I think I'll go with this version!

You would better stay away from Aligot (btw don't forget the sausage with your aligot). It's like opiate albeit a bit more addictive next you will ask for a Truffade or a Retortillat

That's a good idea actually. Metal masters can scratch the interior of your pot. The round glass has less chance of this. Coupled with the large surface area, I could see it working well.

Cubans make a dish similar to this called Papas Rellenas. They're fried mashed potato balls stuffed with a meat filling. If you're curious, you should look that up too. Those are very tasty and exactly what I was thinking of when I saw this!

Yummmmmmm! I happened to have leftover mashed potatoes in the fridge, which were Yukon gold mashed with milk, butter, salt and pepper. I took them out of the fridge and made the dough as you described. I doubled the recipe, and added a double-handful (haha precise measuring...not!) of shredded cheddar cheese. Oh my goodness, were these ever wonderful! I am so happy you posted this recipe, thank you!

Quite good actually. Just don't fry them. As dark as the one chef John had was, he said it needed another 30 second's. The sugar in the sweet potato will most likely burn bad enough to turn quite bitter.

hi, u can youtube any indian website for green chutney. same thing. u can make it spicy or not as per yr taste, they r excellent n easy to do at home as long as u can get fresh mint n coriander/parsley. hpe that helps.
