300cc vegetable dashi
2.5cc light soy sauce
2 to 3g salt
20cc mirin
* 1 eggplant
200cc dashi
15cc dark soy sauce

* 4 taros
300cc dashi
30g sugar
2 to 3g salt
7.5cc light soy sauce
7.5cc mirin
A handful of bonito flakes
* 15g x 4 lotus root
100cc dashi
10cc sake
4g sugar
3 to 4cc dark soy sauce
2 to 3cc tamari soy sauce
* 25g x 4 squash
200cc vegetable dashi
10g sugar
15cc light soy sauce
7.5cc mirin
yuzu citrus
* 10g x 4 carrot
75cc carrot dashi (made from grated carrots and kombu)
75cc vegetable dashi
10cc light soy sauce
10cc mirin
* turnip leaves
happo dashi
yuzu citrus
