This time, Chef Morimoto from Chuka Shunsai Morimoto in Osaka introduced us his superb stir-fried liver with leek, using techniques that even pros don't know.
- Ingredients:
100g pork liver
10g leek
60g bean sprouts
600g Chinese seasonings
300g oyster sauce
75g sugar
10g MSG
10g chicken powder
510g water
10g Chinese rich soy sauce
Potato starch
4g eggs
4g garlic oil
Grated garlic
30cc lye water
200cc water
Baking soda, 3g per 1kg liver
2 tbsp soy sauce
Aesame oil
Sugar
MSG
1 tbsp baijiu (or shochu)
4g hemp oil, optional for finishing

レバーの仕込みが丁寧で美味そうですね!😆👍 よだれ鶏の蒸し鶏も、重曹を使って柔らかくしているのですか? 蒸し鶏もプリプリで美味しいです‼️😀

レバー、とてもプリプリしていて美味しいです。 よだれ鶏の蒸し鶏は、また別の方法で火入れをしています。 また公開可能かどうかは確認してみます。

かん水の代わりに重曹でもいいのかな

重曹でもできなくはないのですが、その場合は重曹を一度沸かして冷ましたものにレバーをつけてください。 沸かすことにより弱アルカリ性炭酸ナトリウムになります。 かん水は、強アルカリ で、アルカリ成分が強いとレバーがプリプリになるので、重曹の場合はプリプリ感はかん水に比べると弱いです。
