They took small part of the old wooden bridge to study them and date them, and put the old structure back in the mud as it was before, so it would not deteriorate. The water had kept it in a very good state of conservation.

So what he was saying in summary is that this is a donjon (defensive and living tower) located in village Crupet in Belgium dated to the end of 13th century (1200s). They did some excavations in the moat and discovered foundations of an older bridge of wood where the stone bridge is now. In the moat they also found artifacts people have thrown off during the course of centuries so not only medieval but also 16th and 17th century objects of their day-to-day life.

Not sure if they made mention of it, but it appears the foundation of the older wood bridge was the temporary structure built to support the heavy stone arch during construction. Once the stone arch was complete and self-supporting the wood structure below would be removed.
