Debería de existir una clase en todas las escuelas del mundo,para preparar artesanos y no perder la tradición del mejor trabajo “Hecho a Mano” y mis respetos para el señor de los mejores artesanos en el mundo de la cuchillería.

A si claro no me explique,quise decir que deberían implementar una clase de forja para saber lo más básico,el secreto Japonés sería difícil principalmente por sus materiales que no en todo el mundo son el mismo acero y siglos de conocimiento los respaldan.👊🏻

Tengo la suerte de poseer cuchillos artesanales japoneses en mi cocina, son de lo mejor en cuanto a calidad y nitidez del filó, aunque requieren de cuidados y mimos, solo demostrar mis respetos a estos ancianos que saben tanto de su trabajo!!!

Shinichi Watanabe is another great multi-generational Japanese blacksmith. He custom-made my Yanagiba some years ago. It's the finest knife I own.

Una pregunta, el artesano mientras afilar el cuchillo en la placa diamantada, afila alrededor de 20° grados y después abre mucho el ángulo de afilado ? Algún me podría explicar el por qué de esto ? Gracias

Por lo que he visto es para asentar el filo, abriendo el ángulo se consigue retirar la microrebaba del filo y que esta no interfiera en el corte, hay un canal llamado utset 1892 que tiene tutoriales y te lo explica mejor

Маленькая пластинка стали для режущей кромки сваренная с обухом. Других кузнецов смотришь, они редко когда занимаются подобной экономией.) Тем и хороши мастера, они никогда не будут выбрасывать денег на ветер.

Не совсем так: кромка лезвия - даёт твёрдость и, соответственно, "длительную остроту". А остальной металл - эластичность. У меня были ножи полностью из стали со свойствами кромки - можно сказать - "стеклянные".
