Homemade Roasted Tomato Salsa
Ingredients:
Grab some tomatoes, Roma if you've got them, or whatever you have in your kitchen.
Spice it up with jalapeno peppers; adjust according to your taste or go for serrano if you're feeling bold.
Optional but delightful: a bell pepper, red or green, if it's hanging around.
Onions, yellow ones work wonders, but white onions can do the trick too.
Lots of garlic - a full head, around 10 cloves, for that rich flavor.
Freshen it up with cilantro, about a medium bunch, washed and chopped.
Season with about a tablespoon of Redmond Real Salt or adjust to your liking.
Instructions:
Line up those tomatoes, onions, bell pepper, jalapeno, and garlic on baking sheets.
Bake at 375˚F for 25 minutes until your tomatoes are nice and soft.
Get that broiler going - move the baking sheet up top and broil for 5 minutes, enough to give those veggies a little char (watch out for burning).
Let things cool for about 20 minutes, then toss them in a food processor with cilantro and salt. I do it in two batches with my 13-cup processor for that perfect consistency.
Mix it up: Combine both batches in a bowl, season with a bit more salt if needed.
Cool it down to room temperature and pop it in the fridge or freezer for later.
