I’ve always heard you want the meat to sit out at room temp for at least 10 min. That way it cooks through at a more predictable rate. Bc it’s not cold inside. I like the cheese crisp. I might do that.

Keep seeing grill chefs stress how you need at least 20% fat in your meat to make a decent burger, I'm glad you've proven that's not necessarilly the case!

gruyere cheese, it is very similar to swiss cheese.

Lets the burger rest so that the bun doesn't get soggy then puts sauce on bottom bun and soup on top of the burger.

Hey Alex, the sauce is mayo based so it wont sog the bun..it's an oil based protective layer of deliciousness :)
