I learn how to make Mozzarella Cheese from the best cheesemakers in Italy. Their buffalo Mozzarella "mozzarella di bufala" is traditionnaly made following a secret recipe, in Campania, close to Caserta.
Artisans curdle the milk by introducing natural whey from previous batch. Curds are matured and acidified naturally. Then Spinning "Pasta filata"...

I'm italian, soi speak perfect italian. My dad is german so my german is also close-to-perfect. I know it sounds dumb, but once you know 2 languages learning new ones is easier because your brain is used to switch between them. So growing up i had english at school, but they don't teach ANYTHING there, it's horrible, so i just kept watching videos and films in english until i understood it pretty well, obviously my pronounciation isn't very good since i never speak it. I also had 3 years of french in middle school but i don't remember anything... so i don't know about the rest if europe, but here in italy learning languages at school? Forget it.

I found a small container of "mozzarella di bufala" at this health food store near me, and I was so excited to try it since I remembered this video! It. Was. Exceptional. So soft and smooth, the most perfect ball of mozzarella I've ever eaten, AND the container also said it's lactose free which I wouldn't have guessed, but I guess that's the difference between cow mozzarella and buffalo mozzarella. I also gave some to my friends and now they blame me for ruining any other kind of mozzarella for them, because they don't want to eat anything else but the buffalo one! So thanks Alex for schooling me on the origins of mozzarella, I would never have known otherwise and would have missed out on something fantastic! :)

And that's just the industrial mozzarella di bufala. "Real" mozzarella isn't even supposed to be cooled, it loses taste when you put it in a fridge. You usually can't really get that kind of quality unless there is a local producer near your city.

Andrew Lazar- Do you think it's just a cultural thing or more to do with different generations of different ethnicity interacting? For example I grew up in the US, but was born in Russia and spent the last three years living quietly in central England, despite that I speak very poor Russian, very good English, have relative fluency in Spanish and Japanese, but have never been able to learn a word of French... Huh, maybe I answered my own question...

Alex, out of curiosity, how many languages do you speak? And what has been the funniest language mistake that you've made? Also, I want to say that you've inspired me. Latin languages are not hard to learn once you have one as your second or third langauge, they are very similar to the point that if you are very fluent in spanish you can get around italy and portuguese speaking countries without actually having to learn the languages, i have a friend that got around italy with only spanish

@@malakarvonstroheim5372 Italians can't even understand other Italians if they're speaking a different dialect. Yeah, you can "get around" in Italy with only Spanish, but you won't be able to actually converse with people. Heck, you can get around with only English. But I don't recommend it.

A french who speaks italian? Well it's time even for me to start learning french. However even for us who don't live in Campania region is difficult to taste the real mozzarella. The first time I did I was amazed... I discovered the real taste and flavour of mozzarella. Great experience. No matter what the results will be, to prepare a mozzarella on your own is extremely difficult. Good luck with your efforts but you already won

I love how you try news things and then learn from the masters and make humble comparisons. I will not be able to appreciate the store bought mozzarella after watching this. BTW, I was impressed that you received the attention of Jacques Pepin with your French omelet video. I actually learned a lot about the technique watching you fail over and over again. I think I have gotten it right in 1 out of 10 trials.
