These fried bologna bánh mì bites might just be the best appetizer at your Super Bowl party. The contrast between rich, crispy edged bologna atop soft baguette, raw-and-crispy marinated veggies, and the spicy, sweet sauce is incredible. I like to say that cooking is about contrast, and this is the perfect one-bite example. Enjoy!

Maybe put the Spam in the freezer for awhile before you try to slice it.

@@johnparnell9488 I'm more concerned with it not falling apart after frying and getting dry. Hit it with heat so you get that nice Maillard reaction, crust, and crispiness. Just gotta be gentle getting it into the pan. I think having it in the freezer might throw off the cooking time and evenness.

I grew up in Southern Appalachia. Fried bologna was a staple. Nice to see its deliciousness being recognized.

I knew where the tail of that carrot went just by the scooping motion! And I was so relieved when Chef "cleaned" that splash of sriracha off the cutting board ... I was mentally cheering him on "C'mon do it! You know you want it!!" 🤣

Dear chef John, I just want to say that words cannot express enough how much I appreciate your content. It's always a heartwarming experience to go through your videos and I love binge watching your recipes even though I don't practice them (mainly because I don't have the time). Anything that has fried baloney in it is a good thing. Btw, I could knock out the Oscar Meyer jingle at any time of any day...its been ingrained in my head since I was a little kid in the 70's. Now Im thinking about re-watching Mad Men.

This is what happens when your half watching. When I saw the bread with the housing mayo, I first thought it was peanut butter! But since I know how good peanut butter is with fried bologna, I thought that would be really tasty, too!

If you live by a vietnamese community, try this with cha lua (viet equivalent of ham) for more authenticity. they sell cha lua at any viet deli

So refreshing to listen to and watch Chef John's videos. Thinking of using this procedure with cashew butter instead of fried bologna. Cashew butter can be a real rich treat, as can fried bologna. Thanks for the suggestions, Chef John! (Hungry much? 😋 I would have scarfed them down, too. Slower, just out of habit.)

As someone who loves Banh Mi ... this is nearly perfect. The only thing I think can be improved on is the "sandwich" experience e.g. a bread topper, if you get my point. But man, holy heck, I absolutely love this recipe. Added to my personal Trello for recipes already. :) Thanks Chef John!

I usually follow Chef John's recipes faithfully the first time but this one invites experimentation from the start. How about using some braunsweiger spread under the mayo to simulate the pate I have enjoyed in so many banh mi sandwiches over the years.

There's a restaurant 5 minutes from my house called Bahn Mi Bites after its specialty dish. The Bites look very much like this but they use the Vietnamese read and white hams and pork floss.

If you want this to be more authentic go to the Vietnamese store and look for Cha Lua. It's a vietnamese ham

What game? Either way, love Banh Mi's! Got a nice little spot less than a mile from the house called Pho Eva and I regularly get their traditional sandwich. With pate, grilled pork, ham, and bologna! Of course with all the accoutrements of the veggies. Would like to try this appetizer version!

As a kid we ate many a plain bologna sandwich on Wonder Bread, with OM bologna of course. My cousins fried their bologna, and when I saw it I was surprised and amazed. Now as adult, once in a great while I'll buy bologna to fry with sunny side up eggs. But what to do with that extra bologna? Now I know ! Thanks, CJ!.
