For this video, I bought a 25 pound hunk of beef chuck roll (IMPS/NAMP 116A) and started breaking it down into smaller cuts. From the comfort of my home, I show how I cut, store, freeze and eat some of the chuck roll in this video.
Typically, the local discount supermarket has beef chuck is around $5.50 per pound. The chuck roll I purchased was $3.09 per pounds.
The breakdown of the Beef Chuck Roll.
Divided into the Chuck Eye and Underblade.
Chuck Eye: Chuck Eye Roast, Chuck Eye Steak, Delmonico Chuck Eye Steaks and Country-Style Beef Ribs (Boneless).
Underblade: Sierrra Steak, Denver Roast, Denver Steaks. The Denver Roast is the 4th most tender muscle on a beef steer.
