Ingredients :-
For Dal -
1/2 cup toor dal(pigeon pea) washed with water 3-4 times and soaked in 2 cups of water
1 tblsp oil
1 tblsp ghee
1/2 tsp mustard seeds (rai)
1/2 tsp cumin seeds (jeera)
12-15 curry leaves (kadhipatta)
4-5 cloves of garlic finely chopped
1 tsp of finely chopped ginger
1/4 tsp asafoetida (hing)
1 medium sized onion finely chopped
2 green chillies finely chopped
1 medium sized tomato finely chopped
1/2 tsp turmeric powder (haldi powder)
3-4 cups of water (total)
1 1/2 tsp salt
2-3 tblsp of finely chopped coriander leaves (dhaniya)
For making Puri atta-
2 1/2 cups of wheat flour
1 tsp salt
1 1/2 tblsp of malai(cream) or 1/2 cup milk or oil
1 tsp oil
3/4 cup water or as required
For Rice-
11/2 cup rice(200gms) washed 3 times and soaked
2 tsp of salt
1 tsp oil
For Aloo sabzi-
6 potatoes(400gms) boiled and coarsely chopped
1 tsp salt
4 tblsp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
12-15 curry leaves
1/4 tsp asafoetida (hing)
4 green chillies coarsely chopped
1 tsp of finely chopped ginger
1/2 tsp turmeric powder
1 tsp of Kashmiri red chilly powder
2 medium sized tomatoes coarsely chopped
11/2 tsp of salt
1 tsp coriander-cumin powder (dhaniya-jeera powder)
1/2 tsp sugar (optional)
3-4 tblsp of coriander leaves
For Cabbage Sambhara-
150 gms of chopped cabbage
1 tblsp oil
1/2 tsp mustard seeds
1/4 tsp cumin seeds
1 pinch of asafoetida (hing)
8-10 curry leaves
1 green chilly chopped lengthwise
1/4 tsp turmeric powder
1/2 tsp salt
1/4 tsp sugar
1 tblsp of finely chopped coriander leaves
A few drops of lemon juice
