Ingredients (32 pieces) (All ingredients should be returned to room temperature)
【Dough】
Raw yeast (for sweet dough) 50 g
(In the case of dry yeast, there are variations depending on 4 teaspoons, so please refer to the instruction manual and adjust to that amount.)
Butter or margarine 150 g
Saffron (powder) 1 g
200g sugar
Milk 500 ml
Quark 250g (Cottage cheese, cream cheese, etc. can be used instead)
1 teaspoon salt
1 egg
Flour 960g ~ 1kg

Raisin 1.5 dl (about 60 grains, 2 per lussekatt is a guide)

1. For raw yeast, cut it into small pieces.
2. Melt the butter in a pan and mix with saffron (if the saffron is not powder, mash it in a mortar with a small amount of sugar)
3. Put milk in butter saffron and adjust to 37 ℃
4. Add yeast to 3 and dissolve lightly, then add sugar, quark, salt and eggs and mix.
5. Add flour to 4 and knead the dough by hand for about 10 minutes until the dough is smooth.
6. Sprinkle a clean cloth on the dough and ferment until the dough is doubled in size (20-30 minutes). (Primary fermentation)
7. Crush the swollen dough, knead it lightly, and divide it into 4 equal parts.
8. Lightly stretch one of the dough divided into 4 equal parts into a string shape and divide it into 8 equal parts.
9. Roll one of the dough into 8 equal parts into a ball, stretch it again into a string, shape it, and embed the raisins.
10. Put a clean cloth on top and let the dough rest for about 20 minutes. (Bench time / secondary fermentation)
11. Preheat the oven to 200 ° C
12. After the secondary fermentation, apply a thin layer of melted whole egg with a brush and bake in the middle of the oven for 7 to 10 minutes until it is lightly colored.
13. Place it on a wire mesh to remove the heat. (Apply a cloth)
14. When freezing, make sure it has cooled, put it in a plastic bag, and put it in the freezer.
