GAJAR KA HALWA
Preparation time: 10 minutes
Cooking time: 40-45 minutes
Serves: 3-4
Course: Dessert
Cuisine: Indian
Ingredients
Pinch of Saffron
2-3 Green Cardamom pods, crushed
2 cups Winter carrots, grated
3 cups Cow's milk
¼ cups Ghee
10-12 Cashew nuts, Chopped
10-12 Almonds, Sliver
¾ Cups Sugar
Pinch of Salt
Process
● Heat ghee in a kadai. Add saffron, cardamom, grated carrot and cook till they are soft.
● Add milk and cook on slow flame till all the milk is evaporated.
● In another pan, add ghee, cashew nuts, almonds and saute till golden brown.
● Add this mixture into the kadai and mix well.
● Now add sugar and salt and mix well. Cook for 4mins and switch off the flame. Serve hot or cold.

Being the only south Indian family in the neighborhood of post partition punjabis in Delhi, Gajrela from red carrots in the fridge is the most nostalgic memory. I can totally relate with Ranveer on that. Mom and all the aunties would go to sabzi mandi (20 km away), to buy carrots in bulk. everyone would make it in their homes and exchange the variations. some put raisins, others put pistachios, others like my mom made it plain. Kids would come and go and take a spoonful or so from the fridge while Aunties would sit out in the sun with their knitting needles , gossip topics and katoris of Gajrela to keep going. That picture stays in my memory. Thank you Ranveer for re-living it.

Made this today, followed Mr. Brar's instructions fr 1 kg of carrots. 1 lt milk, used full fat and 150 gms sugar. Came out really well. My neighbours who had never had ( they are not Indians) halwa b4 loved it. A little love from India:)

I do not know much about cooking, but I tried it exactly the same way, only replaced sugar with desi khaand, it took around 01:40 hrs for 750 gram carrots, this is the first time I cooked any halwa & it turned out to be so so delicious, thanks ranveer....

You are right. Gajar Dudhh milke jo magic karte hain uska sach me koi jawaab nahi. Aap ne jo gajar ka halwa sikhaya hain hume, woh aaj tak rang laa rahi hain meri kitchen me. Hi Mr. Brar, you always provide the most amazing and easy recipes even for us novices along with the beautiful stories behind them. I am living away from home and made this halwa on the ocassion of my mom's birthday and sent her the pic, she couldn't taste it bt her smile was worth all the halwa in this world. I am on gajar halwa duty every winter around, and man let me tell you- you just need patience along with the obvious carrots(are red as possible), milk and ghee, but the most important and crucial ingredient is your patience. As he notes in the end, you cook it for 2-2.5 hours, you get something heartwarmingly delicious.

I tried it, became soo goood!!! I added 2tbsp of nido milk powder in the end and cooked for 2minutes and it enhanced the flavour even more!😍

You remind me of my naani. She used to explain me just like you do while making sweets. My mom and maasi are like that too. May be genetical. You are always so precise about measurement. You were the only one who explained about sohan halwa, which was a lost recipe and came from a place where my ancestors belong.
