I bought an oven thermometer for $10, and to my surprise, my oven when set at 250 degrees was actually at 300 degrees. That's an important thing to learn. Thanks AJ.

Great AJ! I love boiling. Mastered getting the right sweetness. But, I decided to give it a try, because I do lose some nutrients in the water. Didn't want acrylamide... but this slower style intrigued. They were great.... I have an extrememly similar small convection oven as I can't really tell ours apart at a glance. Anyway, I wanted to let you know... I had a small sheet that came with an older model that's since gone... it's just a slightly shiny all stainless steel cookie sheet... looks like the same steel as the instant pot insert. When the potatoes were done I was stunned that there was no over browning. Still moist and delish, and not a drop came out of the potatoes. No nutrients lost. I let them cool in the oven like an instant pot since I wasn't in a rush. Most incredibly, that shiny steel with no paper or mat, and I just picked each potato up with zero sticking and no evidence they had been there. I cleaned it quickly anyway, but I didn't need to. Amazing. BTW I used the purple/pale yellow interior Japanese yams. So friggin' good. A+++ AJ

I have become totally obsessed with sweet potatoes! I have a pound + for breakfast with cinnamon cardamom and Ginger, have them as a snack, although I try not to snack, and sometimes mix them in with my dinner. They give me so much energy that I can't eat too much with dinner or I won't be able to sleep. Never get tired of them! And I have a really hard time putting on weight and I'm 53. They are truly amazing Foods!

@@kevinwilson3337 I used the orange jewel but I've learned that there are only certain "brands" that are good. Costco used to carry a really good one but they stopped carrying them a couple of years ago and now I have a hard time finding good ones. Not sweet and too watery. I'm back to breakfast smoothies (hyper-nourishing) now but I love a Japanese sweet potato with beets once a week. At $3 a pound that's all I can afford.

Dear Chef AJ, I just put in some Japanese Brown Skinned / Beige fleshed potatoes to cook for dinner. I went to KZfaq to see how other chefs in US recommend cooking them. As i searched I found your episode on Okinawan sweet potatoes and was amazed and inspired by your enthusiasm. Also really PLEASANTLY SURPRISED by how every word you said about how Delicious the Okinawan sweets were, Are exactly the same way i feel about the Brown skinned / beige fleshed Japanese potatoes that i have been making non stop for the past 4 years!! Can i assume that you know about those potatoes as well? In the meantime I will be searching like crazy to try out your recipes as i search through more and more of your videos. Thanks for this video. I get my purple sweet potatoes from A Dong Market in West Hartford, Ct and cook them in the Instant Pot. Tried your baking method yesterday but really prefer the Instant Pot because the skins remain tender( I like to ear the skins) and the sweetness and texture are wonderful. Thanks for another reliable source and thanks for the codes. Because these raw do deteriorate I cook all my haul and keep some in the fridge and the rest in the freezer . I am never without a purple sweet potato. Again thanks for everything.

AJ thanks for the education. I will try the slow way. I must be blessed, living in San Diego near City heights there are a few Asian Markets that sell them for about $2.00 a pound. For your suggestion box: a tutorial video on all the types of sweet potatoes that make good eating. Yum.

Oops. That $2.00 a pound price was for a dark skin purple flesh sweet potato at Sprouts. The Beige skinned purple flesh sweet potato at the Asian Market was $2.67 a pound.

Best sweet potato ever - kind of hard to stop eating them at satiety, though. Recently the hawaiians at Nam Hai in Tulsa have had rot inside them, even though no soft spots are present on the outside. I got tired of being disappointed by this and switched to the japanese sweet potato. Gotta say. Not a bad life. I’ll bet back to the Hawaiians in a month or two when they’re likely to be more fresh since they’ll be in season. Great video 👊🏼

I find these potatoes a little dry. They certainly don’t taste like cake to me. Maybe I’m doing something wrong. I bought them at the Asian market and also at Trader Joe’s. I’ll keep trying.

Interesting. I can get similar sweet potatoes in Australia, they are beige on the outside and light purple striped with with white on the the inside, I wonder if they are the same kind or not?

I just got my box and tried one. They’re delicious! I’m just wondering how to store them so they’ll last. I bought the 19 lb box, and I’m not sure how long they’ll last. I heard someone say you can freeze them whole raw, but that seems crazy to me. Right now I’ve got them in the fridge since I don’t have any cool place to keep them. How do you store them?

Chef AJ, When you use your Breville for baked sweet potatoes, do you use it on regular (no convection), convection, or super convection? I'm baking some and worry that after 2.5 hours on convection they may dry out. I guess I will take the conservative route today but wanted to ask for the next time. Also, do you ever bake them with two trays in the Breville? Or do you stick with one tray, presumably at Level 6, the bake level as specified per Breville? Thank you!

I got my potatoes and cooked them exactly like the video, but they seem dry to me. Usually I make potatoes in my Instapot and they come out nice and moist. Has anyone tried these in the instapot?

Not really a chef here, but I am on a mission to get healthier, and came across the video. It has to be good cause it's my favorite color Purple. Do you just turn the oven on Bake, or do you put the setting on Broil? Do you have to turn them over half way through cooking? I realize this was done in 2019 and its 2024 now, so still hoping for an answer. Want to cook some tomorrow. Thank you.

I just received my order and can't wait to try. Can these be air fried as fries after the baking as with other types of potatoes? Also, can they be frozen after baking?f And then are there any tips to reheating them from frozen? I'm trying to be able to order a lot when I do place an order but then there's the storage problem. Nicky Brown I have never frozen them but I believe there is information on how to do that on the company website. You absolutely can air fry them I like to air fry my potatoes after cooking but these are so yummy I usually just eat them slow roasted. I know some people make pudding and ice cream with them

I just thought I'd give you an update. I did finally hear back from the staff of the Hawaiiveggie site about freezing the potatoes. They said they had not done that, but have successfully frozen ones that are boiled, and they have no difference to freshly prepared. I'm going to freeze some that I have to see if it changes anything. I also just air fried some (large steak fry sizes, and they are absolutely delicious. I'm going to try them cold, later, too. So glad to find these, Chef AJ. I love them!

Hi Chef AJ, I went to the website and it says you can freeze them to help keep them longer. How do you store your sweet potatoes and how long do they keep in a cool dry place? I don't think I can eat 19 pounds--unless they are as delicious as you say. Thanks :)

I cooked these as shown, but it took them 3 hours to get done, and I ended up turning the oven up to 300 to get them done. Then they are very dry. I think I like them better boiled.

I have never heard of this variety of sweet potato. Here in the UK we just get “sweet potatoes” (generic). I watch you all the time, Chef AJ, and love, love, love your videos. The trouble is, so many ingredients you mention (e.g. all those gorgeous vinegars!) are not available here. I’d love some advice on substitutes that we can get.

Hi. I also live in the UK & understand this problem. I also live in a small rural town where they have never heard of vegans. I just shrug my shoulders & try to adapt Chef AJ’s recipes if I can’t get the ingredients. Be positive : she gives great advice, free recipes & she actually understands obesity 👍

LizzieDripping Hi Lizzie, thanks! I try to adapt Chef AJ’s wonderful recipes wherever I can. She is brilliant! I have only recently embarked on this way of life and we are not totally vegan. I have various health problems and want to eat as healthily as I can, and I am keen to get my hubby’s weight down. Here in the SW people are pretty aware of veganism. I’m pretty used to adapting recipes but those purple sweet potatoes looked something else!! I’d love to try them... Happy cooking!

I got my order from the Hawaiian farm and bake them for 2 1/2 hours at 250. I’m sorry I can’t be enthusiastic about them. They are sweet but the texture is so dry. Am I doing something wrong? Should I steam them? cook them in the instant pot? So disappointed.

Did you refrigerate them afterward? Most people love them I am sorry you don't. They aren't mushy like the orange ones they are dense.

Wow, the 19lb of uglies turn out to be about 1.70 per lb. Free shipping! When I lived on Maui during the late 80s l ate these quite often. There's also a sweet potato with dark yam colored skin and a dense yellow cream colored flesh thar was also supremely delicious. The markets sold both these for .75 to 2 dollars per lb depending where you shopped. And the was in the 80s, so this sound like a pretty good price. We'll see how ugly they can get lol. I ordered the large batch

They are from Hawaii so I don't worry and sweet potatoes are not on the dirty dozen
