Problem with black rice is that 90 percent of the anthocyanins in black rice is destroyed while cooking because anthocyanins are very heat sensitive and also what is not destroyed is trapped within the non soluble fiber. So very very little anthocyanin is actually absorbed.

I already had a plan to graft other nightshades onto potato stalks in containers, but I wasn't sure what I was goito do with all the potatoes because I can't have too much of them until I reach 'fighting weight' due to the starch content. But these sound like their other nutrients would offset the starch factor. (I'm on the MTHF-R gene mutation diet restrictions) I even just found some mutli colored sweet pepper seeds that have purple peppers along with the purple potato seeds! I could have a whole theme going and have to make up a new alliterative tongue twister! Too badd egg plants don't have a P name!

Sounds like you have a plan! Just in case it's helpful, you can soak potatoes in cold water for a while and rinse them to reduce the starch, too.

It just so happens that I have been eating a lot of purple potatoes lately (unfortunately, as far as the varieties we grew last year are concerned, the purple ones had the shortest storage time, so I'm eating up a bunch of sprouting potatoes). They are very, very purple and I've been enjoying them! Unfortunately, I don't know what their variety is because we got one of the mixed "mystery boxes" from the company. It cost less, but we generally don't know what they are. Alas. My husband's favourite is the Purple Viking. It is actually only purple-skinned, so it's not as good as the ones you're talking about, but it is an excellent mashing potato. :)

There is a variety called, “bora valley” that tastes good and has an amazingly buttery consistency but I think has a slight metallic aftertaste (my wife doesn’t taste the metallic flavor). Adirondack blue is another variety that to me has a strong metal flavor, not my favorite.

The “blue zones” are cultures of longevity in the world. They are all high carb consuming groups. They eat about 50-85% carbs. But they eat whole, unrefined carbs.

@@HealthAndHomestead Dad's side of the family, light on carbs, often live close to or over 100 years mark. Mom's side, high carb, short life-span, diabetes. Now most are back on traditional American Indian diet, carnivore with some carbs. After the Tarahumara famine (caused by Monsanto's GMO maize), my ex's family went traditional, carnivore. Maize is a treat, usually for beer. Diabetes is fading out tho they like sweets.
@ShalomSimplified
@ShalomSimplified Жыл бұрын
@@marschlosser4540 Likely, again, because they were eating refined carbs. All plant foods are carb-based, though not all of them high carb. You can eat a plant-based diet without going high-carb and it will be even healthier than the meat-based diet. Meat won't spark diabetes, but it lacks the healing properties of things like leafy greens and berries. You talk about living to around 100, but there are people around the world with plant-based diets living to 120+. It's not all about diet, either. It's a whole lifestyle thing. Whether a carnivore or vegan or somewhere in between, you won't do well as a couch potato, for example.
@marschlosser4540
@marschlosser4540 Жыл бұрын
@@ShalomSimplified Everyone is different. Carbs are unfriendly toward me. Refined or not, the next day i'm dragging and can hardly work. A bottle of homebrew which is a very simple thing to make, is like having a bottle of soda. A traditional diet for us is 80% meat, high animal fats, and very little grain, fruit or vegetables. Those who aren't traditional suffer a lot of disorders with diabetes being most common. There are people who go for months, even years, eating nothing but meat. We don't live very long eating like whites.
@ShalomSimplified
@ShalomSimplified Жыл бұрын
@@marschlosser4540 That's kind of a funny thing to say, since most "whites" have a very meat-heavy diet. The diet that people like me advocate is not traditional for whites, either. It is a diet that is more likely to be seen in Asia, actually.
