I think that there's magic, like TazeMeBro said. The older statues in the crypt are seated with iron swords across their laps. That had something to do with keeping their angry spirits at bay. (I think that's a book detail). Though Ned and Lyanna's statues are standing... so maybe the north didn't remember.

I found it funny that everyone agreed that Theon volunteering to guard Bran alone was an acceptable solution, making Bran no longer vulnerable to the Night King. Like so many details in the battle preparation, this moment made sense *dramatically*, but it made very little sense *militarily*.

Wow, seriously, I never thought this could be a Robb tactic all over again with the night King, it actually makes a lot of sense that he left a large portion of the army and that he goes souther just to get more wights and eliminate the Citadel, and it would be a great surprise for the next episode that they actually win but not quite because the NK is still around with another 50 thousand walkers

Perhaps the dead in the crypts will rise at the command of the night's king, but will not fight for him so long as there is a Stark in Winterfell for them to retain allegiance to. The dead Starks in the crypts could end up defending the non-combatants taking shelter down there.

Given how the books have always hinted that all the Starks have some form of the Sight, though its only Bran that can access it outside of his dreams, I think this might be a deeply hidden easter egg confirming this theory about the crypts in episode 3...

If they are trying to be realistic it would have to do with the seasons shifting from summer to winter; ever since I was a teenager my beach blonde hair turns “dirty blonde” in Winter due to lack of sunlight. Many blondes experience this.
