I just can't believe how few views this has. There is no better way to up the flavor of a dish than to use fresh roasted and ground spices, and you can see how simple it is. Chef, it is easy to make hard stuff look easy, but it is hard to make easy stuff look easy, and you did it.

I have a question. Why do you grind up the whole cardamom pods, leaving the outer shell intact? I would have removed the seeds from the shell. Just wondering.

Hello @mimaberry It is nice to meet you. I have found removing the seeds from the pod unnecessary as they grind to a fine powder after being toasted.
