Restaurant cooking has long been very secretive. Even Asians that have long cooked authentic curries at home do not know the processes that take place in British Indian Restaurants. We call this (BIR) Curry. Follow me as I will show how to cook your favourites from the menu. This Garlic Chilli Chicken will provide a nice spice kick while also giving you plenty of aromatics to dance on the tongue. Hope you enjoy. Al

INGREDIENTS LIST
Recipe
4 cloves garlic
1 tbsp blended garlic paste
3 green chillies
1 tbsp mix powder
1 tsp chilli powder
1/4 tsp black pepper
2 cardamom pods
1 tbsp tomato purée
2 slices fresh tomato
1/2 tsp Kasuri methi
1/2 tsp salt
1 tsp sugar
6 pieces chicken
1 small onion
Vegetable oil
Base gravy

After cooking authentic curries for over 20 years now, this recipe chilli garlic chichen bought back all the memories of when I used to go to BIR curry houses. Brilliant thank you Al. I almost cried at how good it was!!!

I made your chicken chasni last night- as a displaced Scot in Canada. Even my hyper critical 14 year old was impressed! Thanks for all the great guidance!

Second recipe (after the chasni a few weeks back) that I've tried and it's absolutely banging. I did more garlic and used cayenne instead of chilli powder, and three teaspoons of chilli paste instead of fresh chillies - but other than that everything the same and it was bang on. Lovely soft garlic and enough of a kick to sting the lips but still able to taste the sauce. Beautiful.

Made this last night, it’s my new favourite curry dish, great heat (I did add extra hot chilli powder) and I added green chilliest to the base gravy. Al your costing me a fortune - just ordered Indian serving bowls to match my new dabba, but it’s well worth it. You given me a new skill, thanks Al.

Al YOU ARE THE MAN!!!! For about 20 years I have been trying to unlock that BIR taste at home. I’ve made base gravies, mix powders etc and made some nice curries but never one I could have mistaken for a good takeaway. I just made your base gravy 2 and mix powder and knocked up a garlic chilli chicken and it was outstanding!! If I had ordered that from a takeaway, I would make it my new regular. The whole dish had that pungent goodness that I don’t know where it comes from in a good BIR but you miss if it’s not there. Thank you so much 😀

I've been making "curries" from so-called authentic Indian cookbooks for over 30 years but your recipes take me into another dimension. I have to admit that I added some chopped peppers and king prawns instead of the chicken to the recipe and after a couple of glasses of wine and tasted it, I was in ecstasy! The best BIR dish I have ever tasted and I'm extremely proud of it, all due to you. Thanks Al, you're the greatest!

After many years in the home making curry wilderness, I came across Al’s Kitchen. What a revelation!. I made this dish tonight for my curry loving family. They are harsh critics by the way. For the first time ever, I got a round of applause. Thanks Al, I now have a much deeper appreciation of how a great curry comes together,. It can’t be rushed or bought, it takes time and much enthusiasm. Keep them coming. If you ever hold a master class, can I get a front row seat?

Made this for the first time yesterday. Although the base gravy takes awhile to do it’s definitely worth it! And now I have plenty in the freezer for more of Al’s great curries. Can’t wait to try more

Yet another banging curry Al, just did it Saturday evening, came out amazing, I bought some fresh garlic 🧄 in a local shop, it’s bigger and harder to peel than the regular stuff, but tastes much better
