This recipe is very simple, but the result is beyond amazing. Chewy egg noodles tossed in lots of garlic, butter, and the trifecta of umami sauces! It was made well-known by a San Francisco seafood restaurant, Thanh Long, though I believe when I had it, it was at a place called Crustaceans. My memory is blurry, but also, this dish was so popular the multiple seafood restaurants had copied the original! I loved it when I first had it, and so glad to find out it's not hard to make at home!
Perfect as a side dish to a seafood feast, a barbecue, or any meal that is protein-heavy. Heck just serve it with simple grilled shrimp and a side of sauteed greens and it's all you need for a delicious meal!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZfaq channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZfaq videos, her cookbook, and cooking classes. Yes, this orginated in San Fran from Crustaceans (and is quite expensive there) - PPQ2 also makes a very similar version (and is not as pricey as Crusteasans) - SUPER, SUPER yummy....it's great with some shrimp added in. Thanks so much for sharing this recipe!! 🥰

Great food wisdom here. By the way, at 6:15, she makes the point that adding a little olive oil to the butter gives it better consistency when you mix with with the noodles. Another advantage is that it reduces the burn point for the butter some which will help getting the garlic to caramelize nicely.

Saw a version of this made with minced canned anchovies (& spicy red chili's) sautéed with the garlic-if you're like me, & live where fish sauce does not. You're incredibly likable, and an antidote for the "chefs" 🙄 who specialize in slick, calming videos designed to soothe & beguile, not get people cooking practical, delicious, simple food.Gracias from Baja!

Michael Ta - actually, the recipe came from Thahn Long, the An family's restaurant in San Francisco's Outer Sunset neighborhood (same owners as SF and LA Crustacean). Of course, it doesn't matter where you get them - they're fickin' awesome!

I already know that this will taste just mindblowing! AMAZING! Just sharing this with a friend. Chives could add to or replace the green onions. Very similar, I think, (I'm german) to the italian "aglio e olio". And a stunner, for sure! And, as you've already mentioned: to add some fried cabbage to this, or shrimps, or:.... This will easily make a whole dish. Thanks for sharing from the far north of Germany!

Looks like the Thai version of Italian Aglio Olio. To de-tangle the noodles use the defrost function of the microwave or loosen in cold water rather breaking with hands.Its an easy weezy simple dish and I loved it,gonna make it soon.Thanks Pailin.

I tried this with lo main noodles from Safeway because I had no time to go to an Asian grocery store but omg it was perfect 👌🏽 Even better the next day. I made a ton! Made Kahuku style garlic shrimp and *chef's kiss* 💋

I made this twice last week as my one-dish meals: 1st time added string beans and chicken while using dried udon; 2nd time added okra and shrimp while making my own egg noodles. Both versions were super delicious, but if you're using udon, go easy on seasoning as the noodles themselves are quite salty. Spaghetti also works. Thank you Pai for your recipe! BTW, could you please do some okra dishes? I'm really curious about how the Thai cook the vegetable.

SF native but moved, I had this from the source many times. Looking forward to trying it. Talk to me about the roast crab with the abundant juices that get poured into the noodles and that will seal the deal. I wouldn't want one without the other!

I’ve made a similar version without using the Asian sauces for many years. I like spaghetti but I can’t eat tomato based sauces. So I had to get creative. I love garlic.

Spaghetti noodles works great with it too. I make it with just garlic, butter and fish sauce. And a drizzle of japanese mayo. So delish! A sprinkle of cilantro and pepper flakes.

You know that's when something taste good, when you brain pops you eyes roll back in your head and you wake up in a taste sensation like none other... i could see how good the lemon tasted with those buttery, garlicy, umami noodles.... yum yum yum... I cannot wait to try this recipe.

Pai - I tried your method of making this fantastic dish last evening. Many thanks for sharing it with us as it did turn out great!!! I served it with grilled shrimp and grilled cauliflower which made for a perfect meal.

This tastes great and seems to be very similar to Pasta aglio e oglio, garlic and oil pasta. I would recommend to boil the pasta for a second and take some pasta water to bind the sauce, to make it a less fatty feeling experience. The storch allows oil and water to bind together, which will also allow the cheese to incorporate appropiatly.

I do a version of this. When I make pasta, I will make extra and put it in the fridge for later. So, in a pan with some olive oil, I add some chopped garlic and then I release the meat from one or two sausages and fry it as meatballs. I add quartered mushrooms and cut up onions, reasonably chunky. Then I add the pasta. On top of this, oyster sauce, chopped celantro, and chopped italian tomato... I like to mix up the ingredients based on what's available, sometimes celery and spinach.😋👍 I'm learning very much from you.

I didn't realize this was a famous recipe, it's like my go to 3 am noodle dish lol. But I use spaghetti and do a quick stir fry of the garlic and pasta in homemade chili oil, really delicious!

I lived in SF for almost 12 years. Ate garlic noodles at LEAST once a week from my favorite Vietnamese restaurant - Sunflower, in the Mission on 16th. Could never find them after leaving SF, and I've been gone now 10 years. Now I know why every Vietnamese place I've been to since leaving SF was like "Umm, never heard of that"! My hubby and I made this last night - it was incredible. Had to improvise - the pre-cooked vietnamese udon I found literally disintegrated the moment you touched it, in or out of cold water. So went with fusilli instead. Ratios were a little off as it was rather dry, but OMG the flavor was mind-blowing. Make sure you get the Lee Kum Kee sauce that lists oysters first - my local Asian market had three versions, each more expensive than the last, and only the spendiest had oysters listed first.

I didn't have lemon so i used lime which took just enough edge off the harshness of the fresh garlic. Perfectly delicious!!

I think I’ll add some shrimp to that and have this as an entree. It’s very similar to garlic shrimp pasta that I make using spaghetti noodles. Substituting pecorino romano for the parmesan might also be good.

Definitely a keeper. I bought the Golden Mountain Sauce which makes all the difference, it resembles Maggi Sauce but the Golden Mountain Sauce is mild and not too salty. It renders and very subtle flavor. I also added 1 tsp of sugar to the sauce. Alternatively, I sliced the garlic instead of mashing them. What I did not like when you mash they, they clump when cooked and when you eat the noodle you are likely to swallow chunks of garlic clumped together. Slicing the garlic gets them well distributed.

I grew up eating at the original restaurant - Thanh Long was their first (casual) restaurant. Boozhee Crusteacean came later. Black folks have been loyal to Thanh Long for decades and you will often hear somebody's grandma calling it "thang long". LOL

I made this and it was pretty good. I feel the garlic can reduce a bit, butter can go up a bit and sugar be added as Pai mentioned. I also choose fresh thinner fresh yakisoba noodles. All we need now is Pai to teach us how to make that pan fried sugar and fish sauce shrimp to go with it. I had a version about a week ago with some parsley and added a nice little freshness.

This reminds me of the garlic noodles from EMC seafood 🤤 I've made some before and this video makes me want some right now. I think I have all of the ingredients to make this too.

I’m pleased to tell you that I made this in the past, thinking that I created it! I used the same ingredients except for chilli flakes and probably not exactly the same amounts, including the butter. I loved it so much! I may have known about it years ago after taking an authentic Chinese cooking course. My kitchen has all the condiments including fish sauce! I am German born but love cooking many different ethnic dishes. So much fun watching you in the kitchen I have subscribed. You present everything so nicely!

I loved your garlic noodle recipe. Made me so hungry. I also like your personality and the way you relish food. You remind me a little of Laura of Laura in The Kitchen. Bless you and keep on cooking.

Many thanks for this simple recipe. My 7 year old loved it. The key is the cheese which take the greasiness out of the noodles and smooths it out.

I made these noodles for lunch today. Wow! Thank you. It was extremely tasty. I would like to make it next time and cook it together with some shrimp for more umami. Maybe some thinly sliced fresh Shiitake mushrooms too. You’ve got a fan.
