I'II never tire to say this - the droids and the drones are better soldiers than the humans. They don't need water, food, air to breathe. They don't need salaries. They don't ask questions. They don't get scared. They can be mass produced. I understand that in the original trilogy they didn't have many robot characters because the budget was tight and there were no CGIs.

If you freeze one of the frames that shows during his flashback when his new armor is being forged you can see a B-2 droid shooting the fleeing civilians. Stands to reason that it’s a separatists droid but regardless it implies that he hates droids, because they killed his family

I think for the character in question specifically, It might be more about (though still with that other stuff layered on top of it) practicality as a bounty hunter and often lone-agent. A droid could easily be hacked from a distance to suddenly turn on him or sabotage him in some way. They could be used to discreetly download the flight log of his ship or implant a time bomb like virus on it. While organics he encounters are not likely to be any more trustworthy, He knows he can at least motivate an organic with payment or intimidation. That he can read their facial expressions and tone or wording one uses for tells that they're being dishonest. He has more of a chance at seeing betrayals coming with organics. And most of the threats they pose are direct and he can deal with those if it happens. It's the same reason secret service agents still use analog flip phones and pagers. Why good security has metal detectors in the forms of wands and gates. People can be more easily subversive with technology than without. Not letting droids do things on his behalf as much as is possible greatly limits the factors he has to keep in mind regarding safety and security.

I find the Mandalorian's disdain for droids a bit surprising since the Mandalorians rode the Basilisk war droids after their conquest of the planet Basilisk and used them in battle during the Mandalorian Wars. Of course, this all happened around 4000 years ago--plenty of time for the Mandalorians to change their minds about droids. Plus individuals, such as our Mandalorian protagonist, reserve the right to form their own opinions.

My theory is that he hates droids bc his home village was on an separatist planet and clones took shelter there knowing the separatists would't endanger their own civilians. But then a separatist leader were so confident in the super battle droids accuracy and inteligence thinking they would hit the clones leaving the civilians unharmed sent them in to kill the clones. But something went wrong and the command to kill only clones was misinterpreted in the droids coding and they started firing at the civilians wiping out not just the clones but the entire village. The mandalorian blames his familys death on the use of droid soldiers since real soldiers wouldn't have harmed their own people.

Star Wars Galaxy is a macroprojection of our world were you don't have to feel bad when watching because it's not inflicting you personally even though you're in the very same position. Politics and social life is what made me like the stuff that was produced after a new hope

We already know why he hates droids. He's a foundling, meaning he was found by a Mando tribe after being orphaned. He was orphaned thanks to a CIS invasion of his homeworld. You can see B2s and an HMP in Trailer 2, in the same flashbacks you've seen in Chapter 1.

Why didn't the rebels penetrate the particle shield at the battle of Scariff by making a hyperspace microjump to the surface of Scariff from outer space? In such a way, they could effectively bypass and tunnel through the energy shield.

One more reason why the Mando'ade hated droids is because of a conflict during the old republic. A group called "The Eternal Empire" used droids called "Skytroopers" to warm enemies. During the conflict, the leader of the Mando'ade, Mandalore, was killed by the droids.
