It's not just pressure but truly the position of the tip relative to the surface and whatever is being piped. The mistake with the rosettes is that the tip is too close to the surface and it's being dragged through the rosette itself. The round tip is a really good example of the common mistake of treating the surface as if it's paper, piping bag as if it's a pen, and the medium being piped as if it's ink. The best description I remember from my beginner days for the round tip is to use steady pressure as if you're producing a strand of soft spaghetti, and then using your whole arm to shape the drop of that strand.

Very helpful! As I watch you I realize my buttercream tends to be a bit too thick so I need to thin it out more. As far as the grass tip goes, I made some dinosaur cupcakes and was piping the grass the “wrong” way, so the blades of grass were quite limp…however, I explained that since dinosaurs were walking on it, they squashed the grass😜

Thanks for the post ma'am, it's a very informative video but my mom says the first and arguably the most important part is getting a good consistency to your icing. She said air bubbles are bad for pipping medical student Malaysia 🙏

Georgia, this is very helpful. You are a great teacher! Clearly, buttercream consistency is vital. Can you include what type of buttercream are you using? (i.e. American buttercream; Swiss Meringue buttercream)

Thanks for this video!!! It will help me a lot!! Just wanted to ask how do you keep your buttercream from not melting?? My buttercream melts when I try to make the simple flowers ☹️😢

I would guess that your buttercream isn't stiff enough (what kind are you using?) and/or you have very warm hands. Try chilling your buttercream for at least 30 minutes prior to piping. Just be sure to stir your buttercream when you take it out of the fridge, just enough to knock out any air bubbles that may have developed while it was chilling, before filling your piping bag.

All of the incorrect ones are fine if they're what you want. Not wrong, just different. I could see the flatter flower shapes being used as background against more substantial flowers, for instance.

OMG, this saved me from a full on meltdown yesterday when doing rosettes on a cake. I could not get them to turn out regardless of what I tried. Watching you do them while describing do/don’t gave me the information I needed and gave me a chance to calm down 🫣(anxiety of new challenges under pressure). Thank you so much!
