Thanks for sharing the footage from the Frankfurt Christmas Market, it brought back so many memories for me. I was stationed, three years, in Aschaffenburg in the late 80's and fondly remember the Christmas Market there and in Frankfurt.

The year we went to Germany for the Christmas Markets, we ate bratwurst and hard rolls just about everywhere we went (Munich, Karlsruhe,, Rothenburg, Freiburg, and Werttemberg). My favorite cookies are Pfeffernusse with the white hard glaze and the gingerbread. Also ate a lot of the sugared hazelnuts and almonds. I make sugared pecans and almonds every Christmas. Love those.

One year I had the good fortune to have a business trip to Germany just before Christmas. I was in Köln, and my hotel was just across the river from the city center, so I decided to visit the Christmas Market for my last dinner, as it would be more fun (and less expensive for the company) than eating in the hotel or in a restaurant. I remember I had a bratwurst roll with mustard, some glühwein, and sauerkraut sautéed on a griddle and mixed with sour cream and caraway seeds. All wonderful, and the sauerkraut preparation is now my standard technique for serving it. Most of my ancestors were from Germany or from the German-speaking areas of Schweiz, and I grew up on many old German dishes, so I enjoy this channel a lot.

Hi Marta, one of the staple foods of every Christmas market for me and many of my friends are the fried buttom mushrooms (small Champignon) with a garlic sauce. Also, since you´re living in the area anyway try out the Christmas markets in Michelstadt and Erbach/Odw 50km south of you when the the pandemic is at least partly under control again or even over. The one in Erbach was canceld a few days ago due to Covid and I guess it may happen to the one in Michelstadt too if the current number of incidences stay that high as they are now. Both are pretty cozy (the one in Michelstadt is totally run over on the weekends though).

One thing I had learned over the years and potato pancakes was the first example, was never to trust the tastes of tourists from Illinois. Every time I had seen a crowd around a restaurant and it was of Illinois tourists, they would claim the food to be great. I have been disappointed. What I see in your video looks very good. 'Nabent Marta, Oh where do I start, I miss all that so much. Schmalzbrot, oh yes I loved it, I love the sound of that coarse Bratwurst. I've never heard of Käsewurst but I'm pretty sure I'd love it. Wïldbratwurst I've had, it was wild Boar, but that was from our local Polish delicatessen, does that count? The roast almonds I remember from when I was a child, they were always sweet, honey coated? I don't know. Nierenspieß I have never heard of but I'd love to try, they look delicious. Those chocolate covered fruits were always a favourite when Oma made them. Those savoury PfannKuchen were always a favourite too, especially the ones with speck and onion, I don't remember cheese but that has me drooling Marta. Kartoffelpuffer are another trip to my childhood, no Knoblauchs söse though I don't think that was a North German thing, but I'd like it, we had them with applesauce. Roast chestnuts were always cooked by Opa on top of the heating furnace in the sitting room, not a meal but a snack from what he'd collected whilst cycling home from work. That Rahmbrot and Roggenkruste look wonderful, I don't recall anything like that, I'd love to try it though. That raclette reminds me of fondue parties we used to have with our German neighbours in Herford back in the '70's. Yuk marzipan, I can't stand it but my wife, children and grandchildren love it. Grüss gott Marta.

Chestnuts were very popular in America also at one time. What happened was the majority of the trees were killed by a disease called chestnut blight which swept through Eastern forests in America.

We really mIss the Christmas markets. One food that they would serve at the Trier market was dampfknodel with vanilla or raspberry sauce.

Oh those had to be delicious. We also had Germnknödel (yeast dumplings that are filled) with vanilla or butter sauce. Heaven on earth.

Someone's told you a made-up story, I'm afraid. Nierenspieß (Kidney shashlik) is available not only at each and every Christmas Market, but also at every traditional food truck found throughout the country. ^^
