For this gluten free cinnamon roll recipe, we’ll be using gluten free all purpose flour. This gluten free flour is ideal because it has more protein content, which works well with yeasted dough. Since this recipe is gluten free, you’ll also want to use xanthan gum to act as a binder in place of gluten. Gluten free flours tend to be heavy, so adding baking powder to this mix will create a wonderful fluffy texture. When it’s time to roll out the dough, we recommend sprinkling some rice flour on your baking surface, since it has a neutral flavor that will not interfere with flavor or texture of the dough.
