Sweet Mango pickle
Raw Mango. 6 each
Kashmiri red chilli. 12 each
Garlic whole. 1 pod
Ginger. 1 inch
Jaggery. 100 gms
Vinegar. Half cup
Asafoetida. (hing) 2pinch
Mustard seeds. Half tblspn
Fenugreek seeds. Half tbsp
Turmeric powder. Half tspn
Curry leaves. 3 sprigs
Salt. To taste
Oil. To cook

Use raw matured mangoes and don't keep in the fridge it will release its own water 😊

Hi Sir i like to know if the mangoes has to be little on the ripe side or can i use completely raw mangoes. Is there any particular mango what we have to use. Another thing i like to know if i can store in a plastic container or it has to be a glass bottle only. Please let me know very nice receipe i will try it . Another thing i want to know the quantity of masala as i will be making very little about 6 mangoes as i am alone sorry to bother u and thanx for the same.

It's better if you use half ripe mangoes but keep in mind it should be very hard. Polly mangoes are better if it is available. I prefer glass container for long shelf life. My recipe is for 6 mangoes so you can follow the same, you can adjust sugar and salt as per your taste.

For mango chutney if you don't like skin you can remove.

Yes you have add water from the mangoes, since it is salty it works as a preservatives.

I don't know the exact weight but you can use medium to big size mangoes for my recipe.

We have to add that water to cook the mangoes and also it acts as a natural preservative.

If you keep the oil level higher than that of the pickel and store it an air tight container then it will last for over an year...and if u store it in the refrigerator it will last even longer.

Yes you can store in fridge or immerse in oil and keep outside ( oil should be completely floating on top.)
