I prefer everclear. It doesn't alter the flavor of your cake. However, you can use lemon extract.

Freezing your cake/ making sure your cake is cold before you add the drip and the consistency also helps meaning don't pour a lot or squeeze a lot out of the squeeze bottle/Piping bag
