I'll be honest with you.. The knives aren't cheap.. They are totally hand made in an old school way.. I'm not sponsored nor have any connections with the company but, I'm sure that you won't be disappointed in quality.. I own one myself.. The internet is full of fakes.. Thus having to request an invoice through Almazon themselves. I hear that some of the fakes are really good.. For example "meatheadknives" on KZfaq sells his version.. Where would you dry age it? And how would you dry age it isn’t that bad for your health because meat gets old?

if you use a clean cloth to dry it then put it in a chill controlled enviroment where water can't get to it, it won't rot. use salt or smoke it if you are new to this stuff or google it
