i think he's just steadfast. there is no secret to slowcooking. cooking slow is the best way to keep moisture, cook evenly and not char anything. i slow cook my chicken all the time :). secret to food is low temp and animal fat (he uses lard). but sometimes the best products are not the most profitable.

It wont be easy u know like its a tough and a very little rewarding job like when you are young working to make pancakes would not really cross their mind like of course his kid dont want to learn to make pancakes looking at his dad like that with almost no room for fun or break with little reward from the business like yeah its tough......

阿大葱油饼 a true legend. I lived near in the neighborhood super close to his food stall (glad he opened a large store) in my first 18 years, and his 葱油饼 is so good that I had it at least twice a month. No wonder he’s now famed, his recipe never changed before and after food channels started reporting his business. It’s a sad reality that it’s so intense and is not considered a great job, thus not everyone’s into this pancake balking. I truly miss his pancake and his insistence on quality, which I found scarce these days.

He worked so hard and he’s so proud of it, it makes me sad looking at his poor back. What a strong will, it takes a lot of discipline to work so much, his brand name is truly created through his own sweat tears and blood.

How much a person's personality do we miss when we don't know their language? What a fantastic discussion. Thank you for sharing this comment!! You've got me thinking about it. We see him as a dedicated, sad old man cooking. When in reality, that's not all that defines him. But most people won't know that because they can't understand all the verbal and non verbal queues.

I feel heartbroken that his son doesn't want to follow his footsteps (I know it's unfair to force someone to do something) and no apprentice seems to last in the long hours of work :( I just hope he still finds happiness and contentment in his work despite everything.

I see what you trying to say. But 2 dollars is a lot of money is Chinese currency. Asking 2 dollars for something simple like scallion pancake is like asking 10 dollars for a slice of pizza(not even with pepperoni kind).

When I was in elementary school, my grandpa picked me up from school every friday. We always went to the nearby food market for these. That was his favorite. However, you rarely find these cooked in the traditional way anymore in mid areas of Shanghai, due to the hygiene regulation.

I totally believe this video title. These sorts of pancakes always taste WAY better than I think they will, when made well. Same goes for Korean yachajeon. So incredibly basic in concept yet during the frying, something mysterious and truly magical must happen. :) Yum.

My friend had me wait for a seat at one of her favorite vietnamese restaurant in La Mirada, Calif and it was well worth it. Next time we'll make a reservation...LOL

If he sell one piece for ¥1.5, one day 300 is ¥450, one month rest 4 days. He only earn ¥11,700 not included rent, cost and worker salary. So maybe at the end he just got ¥4K-5K? Not easy to survive with ¥4k-5K in Shanghai, one basic room cost rental of ¥4K in Shanghai. Such a honest and dedicated man, he just want to keep the tradition but not attracted into huge benefit. This is the spirit of many old Chinese in olden times. We younger, must learn from them. Salute.

Unfortunately his passion as taken a toll on is health. He starts making the dough at 3 in the morning when he should be sleeping. Sleeping replenishes all body tissues, bones ect. He is 63 but looks way older and his spine has Unfortunately been affected from lack of proper sleep cycle., long hours on the feet ect. If he had help he could start making the dough in the evening and leave in overnight, as he gets up early anyhow. I will take the extra step and bake mine and see how they turn out.

Ada 阿大 is the most famous scallion pancake stand in shanghai, just FYI. But this is NOT the authentic version I grew up with. It's deep fried in lard and too greasy. The more traditional version uses much less fat.

I really wish his son or daughter changes their mind in due time so they can help and inherit this mans business! Its heart breaking to hear how he wants to hand down his skills yet hasnt found anyone willing yet.. Reminds me so much of my dad who constantly wants me to inherit his and learn from him. Im just so damn fucking stubborn. I really hate myself sometimes. Anyways, this is some awesome stuff and would love to try this one day!

Parents work hard, They know how hard their work is, how little they can make, so in reality they want their children to do something else, to get a better education. very rare to see any parents wanting their children to inherit something that is hard.

It’s sad to see how bad his back is. My parents are older than him and worked in restaurants for 30+ years and look more youthful. His food looks great. It’s a bit surprising he only sells 300 of them a day - I think the time and limited space in that oven really limits the number he’s able to make a day. I hope he’s able to pass on the business to someone worthy and retire peacefully one day.
