In this episode, So Han pours tea in the gàn pào (乾泡) style, which means "Dry Pouring." This is a technique for doing gong fu cha without the use of a cha pan to catch all of the stray water. An elegant, classy, and clean way to make tea! Great for a meditative moment or a small, fancy tea gathering.
The tea featured in this episode is Qu Jiang Bao Pian, a Hunan Hei Cha that is pressed into a little coin.

I've been making much better tea since I started applying your non-rule of "having a good time" and feeling the tea than I did using thermometres and clocks. Thanks a lot, really.

I love how you make dry pouring look so elegant and extravagant. Before this video it kinda felt like it was just the poor man's way of doing things. Now it seems more elegant.

LOL!!!! I guess I've been doing Gan Pao and didn't even know it!!! I'm a neat freak and this is the way I do it when it's just for me or my husband. Thanks for making me feel even more of a tea pro! It has a name...I'm a Gan Pao Guru. Thank you So Han for all you do!

This is amazing but I've got to say one of the things that first attracted me to gong fu tea was how apparently "messy" and casual it was with spilling water and as someone who couldn't pour water without spilling to save his life and has been made fun of for it both by teachers and parents I finally felt at home.

@@TeaHouseGhost Honestly one of the things I struggle with is when I invite friends over for tea and tell them I like to make it in the gong fu style is that they immediately jump to "chinese tea ceremony" which makes them feel intimidated by the formality associated with ceremonies. I have a hard to convincing them that it's not really a ceremony, just a series of steps and methods to produce delicious tea. I think in general ceremonie isn't a great descriptor of what gong fu cha is, because it's a living art born of the common desire of great tea, all rooted in practicality. I want my friends to feel comfortable and at home while sharing great tea with them! What descriptor can I use to describe it that might make it seem a little more casual than "ceremony" ? Thanks!

I just had an idea. I binge watch What I eat in a day videos, not sure I've ever seen a what I drink in a day for tea vid before? I'm willing to bet you drink a variety of teas and I for one would be interested to see this on a sim-regular basis :)

I've been doing gàn pào a lot lately due to lack of space, and yeah, it's real chill. I really can't decide which I'd rather do, because they're both pleasing. Really wanna get back to rapid-fire shī pào again.

I don't know gan pao is actually a thing and been doing it ever since I don't have a cha pan, and thought dry pouring is just some kind of my own personal challenge. Plus I'm the only one who drinks tea in the household. I just recently started doing shi pao with an improvised cha pan, a wide flat bowl, because cleaning tea utensils with hot water and towel makes more sense to me than siding it with big utensils on the sink. There's a big chance I might mishandle, bump and break the gaiwan. Also the tea utensils are non porous though so I didn't worry about the dish soap taste.

This series gave me a great idea on how to add to my own diy dry pour setup. I can use my infuser meant to infuser tea then drop it into a cup, as my shui fang. As a plus it'll be able to separate the tea leaves from the water in order to throw (or compost) most of it away separately. Instead of skipping the wake up phase and relying on the hand towel on my metal tray for when I want to dump water out. Which brings my setup to a rainbow heart mug as a gongdaobei, a gaiwan, two teafestpdx cups, the bottom depending tea maker as a shui fang, teaspoon and pocket scale (and temp controlled kettle, obviously). Not the prettiest setup, but functional.

This channel is spectacular. Thank you! Question: how do you keep the tiny fragments from making their way to the serving cups? Is it just practice? Or are they there, but we just can't see them in the videos? Thanks again for making these, they've been very instructive as I slowly wander into the delightful world of tea.

There are tiny leaf fragments in the tea fairly often - it comes with the territory to some degree. Using high-grade whole-leaf tea will help some.

"it's not about rules and regulations, it's about having a good time. . . and today we're having a good time doing gan pao" =-D I wasn't going to watch this one because I love the fun of playing in the water, but I'm glad I did. I do try to balance dominant and off hand, and not cross center line.... but when I do it's always a little party for breaking the rules. I could see this being a nice way to change it up though. When you leave the gai on the wan, does it not cause the tea to steam? I guess that tea doesn't care... or that style you have nowhere to put the gai.

Yes, the tea will steam a little bit when leaving the lid on the gaiwan, but this particular tea can take the steam and it won't effect the flavor too much. Not letting the tea steam is a little more important for something like green tea, which is more delicate. This tea is hearty!

It is a thing some people do, but is not a necessary form. This style can sometimes allow a hei cha or Shu Pu'er to carry those thick and dark flavors deep into the infusions by saving a little from the last steeping to kickstart the next. This is possible with this tea because it normally won't get bitter (though some hei chas get kinda sour with long steepings)

Love the videos. Glad I watched this one. Do you folks or any other tea drinkers have any alternatives to a cha pan? The gongfu cha set I'm ordering comes with chabei, a gong dao bei, tea towels and a gaiwan, but not a chapan. I'm perfectly fine doing this style, but are there any suggestions for something I can use in a pinch?

Board Lord it's not always something you want to do, but it is a style. Some of the folks pouring tea at our teahouse like to leave a little liquor in a gaiwan of hei Cha or shu puer as a way of giving it some extra concentrate carrying into the next steeping. Again, not for everyone or every time, but a fun alternate style to showcase in the show. =)

You are not supposed to bring your hand over the gaiwan in center... something not right about the layout arrangements... cups should be in the center, further in front of gaiwan...

Everyone develops their own style, my friend. No wrong way to do it. Nothing wrong with disagreeing about style and process, and noticing what bugs you about someone else's style can help move you to experiment in your own ways, but I would promote refraining from telling others they're "doing it wrong." Everyone is on their own tea journey, and any place along that path is somewhere to be celebrated. 😎

It’s more of practical safety, nothing about style... bringing 3 cups of chabei with hot water using chajia over gaiwan, then over gongdaobei, all the way to shuifang is not practically safe.. the idea is to minimise risk exposure.. another suggestion: put the shuifang to left side nearer to the chabei..
