What I'm seeing here is that the more experienced you are, the less you feel the need to use mock meats and start appreciating plants and their natural flavours more. The amateur is trying to recreate his old favorite foods that include animal products, whereas the pro chef embraces the plants natural flavours and works to enhance them. Mindset shift I'll learn from.

I think you can overdo anything and I've seen some vegan chefs try to recreate recipes with veggies only and make some really unappetizing stuff. It really depends on the chef and these are only one example.

It also depends what you grew up eating. I grew up with lots of veggies and I never felt to need to replace meat. And let's not forget that lots of the fake meats didn't exist or were harder to find 15-20 years ago.

2 years vegan and I agree. I still re-create my favorite veganized versions of things on occasion but I find that I enjoy making vegan dishes from whole foods or using new veggies and spices I’ve never used before. I feel like it’s made me become more creative. All this food looked yummy ☺️

I don’t get why there is so much negativity for vegetarians or vegans who use mock meats. It’s like some of you don’t realize that people make the switch to vegetarianism or veganism not because they want to be healthy but just to get away from animal cruelty and to benefit the environment.

I thinks it’s cus a lot of people like to make the excuse abt how expensive going vegan is and how vegan alternatives don’t taste like the real thing and how unhealthy it is, when in reality you can make cheap and delicious meals without using mock foods, and maybe some people don’t know that.

@John Rando You actually can get all of your nutrients without meat. Omega-3 fatty acids can be from chia seeds, flax seeds, some other stuff, and supplements. Omega 3 ALA is found in chia seeds and flaxseeds, and DHA and EPA can come from algae supplements. While DHA and EPA can be converted from ALA, it’s inefficient, thus making algae supplements ideal. B12 can come from nutritional yeast as well as supplements. B12 is apparently given to animals in their food, so it doesn’t necessarily come from them naturally. That could be wrong, I’ve just heard that before. I’m too lazy to write all the supplementations and vitamins so just take my word for it. You can be healthy on a vegan diet. You don’t have to be vegan, I just hate when people make excuses. Like, just say meat tastes good and call it a day. No need to say you eat meat bc health (unless you have an allergy that prevents you from eating major vegetables or something that makes you unable to be vegan).

@@literallycringeidk360 Solely, sure, but I believe you can be vegan for both health reasons and animal cruelty. Regardless of the reasons, animals are being helped if a person doesn’t eat meat and doesn’t use things like leather. If a person extends their plant based diet into not purchasing goods that contribute to, say, animal testing, I’d argue that’s vegan. I agree with you. Don’t mind me, I’m bad at words lmao

@@lalalulu5035 it actually does lol please inform yourself or ask ANY nutritionist. the difference is if you eat processed foods every now and then or all the f time... a variety of mostly fresh food without a ton of preservatives, coloring and chemicals is actually one of KEY elements to staying healthy. theres are researches that proove that processed food, specially processed meat are carcinogenic and have a direct link to heart diseases so

Literally every recipe looked bomb, I appreciate the mock meats as someone who is trying to transition to a more plant based lifestyle it helps to see him integrate alternatives for when you crave a meat flavour or staple. What I really appreciate is that these all weren't tofu based because I have to watch my soy intake and there was something from each chef that I could recreate myself. Need that almond ricotta immediately!

​@Chelsea Smith soy has not been shown to change people's estrogen levels because it contains phytoestrogen instead of the 'real' thing. Dairy products, however do have estrogen in them. So take that into account if you're worried about intaking to much estrogen!

Everybody’s hating on the amateur and I’m trying to figure out how the other two have so much time to prepare their meals. It’s like 10 mins then begin or 20mins for it to marinate. Meantime I’m still hungry and I got 15mins tops on a good day 😂😅

I'm guessing the professional chef cooks his celebrity meals in quantity and reserves a portion for himself. Maybe not, but that is how it worked for a friend of mine who was a pro chef (for not celebrities).

I'd call myself a home cook and I've working in vegan restaurant kitchens, and the one most important thing I took away from working in restaurants is food prep. I do prep when I buy my groceries, before they go in the fridge (5 - 10 minutes tops), and when I'm short on time throughout the week, I can knock up some pretty awesome meals because of that one simple trick. Try it and see how you get on. Good luck! 😊

I just made the pro chefs almond ricotta and hot honey toast. OMG PEOPLE MAKE IT. Its life changing!! I didn't have beets and it was still amazing

It looked delicious, but agave is not honey or honey-like. That's like when someone blends chickpeas and instead of calling it hummus, they call it vegan cheese. Agave is much thinner and not as complex flavor, but great for sauces and adding to tea and beverages. Many years ago, I had something called Just Like Honey from Suzanne's Specialties - that was EXACTLY like honey. It was scary. As soon as my friend opened the jar from the other side of the table I could smell it; I had to check the jar to be sure it wasn't real honey. Mixing it with tea was heavenly. It was pretty expensive and I never see it in stores any more, but they do sell it online. I just bought this new one, "Vegan Un-Honey" by The Single Origin Food Company, which is the only vegan honey alternative at Whole Foods. I found it pretty disappointing. Texture is good, but the flavor is weird and gross, and nothing like honey. Plus it was like $8 for a little jar. That might make a good "hot honey". Or, mixing brown rice syrup & agave in equal amounts with a splash of fresh lemon juice.

What I realize with being a vegan is it's much cheaper when you learn to use just the vegetables and you don't use the meat substitutes. And some of the substitutes I just really like the way they taste! To each his own! You all did a great job!😘

48 yrs ago I became a vegetarian. And believe me there was opposition out there: Grandparents food(they soon "got it" and understood that I wasn't rejecting Them). Thanksgiving, Easter....face it all American holidays are centered around some sort of sacrificial animal. And going out to eat meant you had grilled cheese sandwiches, corn, cottage cheese.. as my brother said " they can't mess that up".There were NO Buffet's, salad bars etc then. We had to learn to cook and create our own version of favorite food. I made spaghetti sauce and lasagne, veg soup. And my meat eaters ,Daddy and other brother loved my food. There was never any left over. Lol. So anyway guys. Appreciate the convince, variety that we have now. Especially the large variety of veg's ,fruit. I never had broccoli, avacodos and more growing up in rural Tennessee. Cornbread and beans, and yes I make those veggie too. Enjoy your vegan lifestyle. Stay with it . You will be around to see 70 healthy yrs too. "Good Lord willing and the Creek Don't Rise".Lol!!!😁🖖

@@ceolbeats7182 It is more difficult to find vegan food in India than it is in the densely populated cities anywhere in Canada. I lived in both places. In India everything is made with dairy and ghee. Alternatively you can eat lots of flour+sugar+oil eating the few vegan dishes. I ate all homecooked when I lived in India. Only thing I got outside was coconut water. I never ordered from restaurants... all the menu is heavy oil or dairy lol. It's impossible over there. At home people eat actual dahl and yam and raw cucumber and all that. Why that stuff is hardly ever available or killed with salt/oil even if it is (all dahl..) at restaurants. If even bazaar has sprouted channa then why it's not part of restaurant dish? It is backwards... that restaurant food in India is only for people who want to get sick.

I’m assuming the home cooked food is more vegan and the restaurant food isn’t, because restaurant eating is associated with a more luxurious meal. We think of veganism as elitist in America, but around the world, it’s just how poor people eat a lot of the time. Meat, dairy, and eggs are expensive occasional foods.

People complain when people eat meat and people complain when people eat mock meat . Moral of the story , people are hypocrites. Enjoyed the meals . I come from a vegan religion so I’ve been eating this way for the better half of my life . Then depression hit , and I stopped caring . Now my body is suffering and i am ready to get back on the wagon . Thanks again love the quality of the videos and how they are quick and not drawn out so long 🙏🏾

So much judgements in this comment section sheesh. So what if alternatives aren't healthy, since when was veganism about being healthy? Veganism is about the animals, it's the lifestyle. If you're just doing it for your health, you're just eating plant-based. I think they all did great with their meals, and I'm glad that goodful is showing people you can still enjoy your faves on a vegan diet, or you can have other options without them.

@@MilmoAvenue I usually find rice wine vinegar in the international section/aisle at the grocery store, usually near the soy sauce. Hope this helps!!

If you make the onion soup, please make sure your onions are actually carmelized, they usually take 35-45 minutes to carmelized & should be a beautiful brown color, will add soo much more flavor to your soup.

I agree. I've been vegan about 7 years and I need the convenience of mock meats to help me meet my nutritional requirements. I like whole foods a lot but I don't have the time or energy to cook for hours every day. I don't have the appetite to eat huge portions of food either, I get bored about 12 bites into most meals other than salad or pasta. I also like the taste of some things a lot, like the Quorn meatless pieces and filets. I can zap them in the microwave for a couple minutes with Cajun seasoning and garlic powder and use them on store bought (or cafeteria/restaurant bought) vegan salads and boom, a complete meal. I like making chick fil a style wraps with lettuce, carrots, sprouts, green onions, and tomatoes with that Quorn chicken too. It's low in fat and calories but high in protein. People bark about processed food but there's no evidence that all processed food is bad, it quite literally depends on what processes are used and what ingredients are in a product. So far I'm not dead, malnourished, or in poor health so I'm going to keep saving animals lives and mind my own business.

Yeah I’ve been veggie for ages and mock meat is the easiest way to add protein to dishes like pasta and sandwiches (no one wants beans in their pasta)

I really agree with you ! I've been vegan for a year now but I always loved cooking so even when I started I was not depending on mock meat. I use it once in while if I'm in a hurry or want to do a recipe that use it but most of the time I don't use it. I'm not that nostalgic of the taste of meat and I try to be the most healthy as possible. Also like I said I just really love cooking so I love making things from scratch :)

I became a vegan after I had a triple bypass,and lung cancer at the same time. Over a month in a coma. A week to get through step down. less than a week and back for more cancer surgery. Followed by 4 experimental chemo treatments. I was sent to palliative care, I said no way, started watching u tubes and I am loving finding new recipes. Now real meat has enzymes in it that causes inflammation and inflammation causes cancer. My arteries were all 60 % blocked. I still have one blocked artery and a bad valve. Good enough reason for me to make a healthy life style chance. Thanks y'all for these yummy looking eats. I can't wait to try them all!!!!!!!!! God Bless , Be safe.

Oh wow. That sounds awful. I highly recommend you look up the KZfaqr Jane Esselstyn. Watch Forks Over Knives if you haven’t already (you’re spitting facts straight from that documentary). Her father is Dr. Caldwell Esselstyn and that documentary is based on his research. They all look so healthy and practically wrinkle-free. I think we all love Jane and Ann together, too. They’re just so funny. Watch her “More Greens, More with Dr. Esselstyn, More Answers!” He explains why it is so imperative for everybody to be eating leafy greens like kale or arugula. He’s a retired cardiologist and surgeon. My grandpa ate proudly a “see-food” diet and died at 75. Dr. Esselstyn is still alive and well at 87.

If you try the French onion soup, make sure you let those onions cook for a lot longer before you add any sugar or other ingredients. They should get actually brown. French onion soup onions should be a deep golden brown. Some other recipes use caramelized onions that have been taken even further, down to deep dark brown. They're so delicious, and it's absolutely worth the extra time to get them to perfection. Start to finish, the process can take about an hour. If you use a lot of onions in a high sided pot like she did here, it will take even longer for the steam to cook off so they can caramelize, so consider using a large skillet instead.

My only complaint is that the onions weren't caramelized. French Onion Soup needs to have caramelized onions.

French onion soup is just : butter for cooking the onions. When it's caramelized you put your white wine to deglaze and after you can put your broth + salt/pepper. If you're caramelizing onions, add baking soda. Raising the PH makes caramelization happen faster

Honestly mock meat is the saving grace for new vegetarians and for vegans mock cheese as well. It takes a lot of time & effort to change your life style & habits. And in many cultures things like tofu are basic foods and not seen as "mock meat"

its a transition .. the longer you are vegetarian the more you move away from it. it also serves as a substitute for SOCIAL EVENTS. A party host that is not vegetarian or vegan: can buy these products to host a party or event and have food for everyone. 👍🔥what is timeless is your friends and family telling you WHAT is on the menu at a restaurant . ..😂😭 . vegetarians can read. "hey they got salad !" "dessert is vegetarian isnt it?" They mean well.. but its annoying

I know! It's so sad! Why bother if you don't have the patience to see it through! Onions for French onion soup should be a deep golden brown. Many recipes use onions that are caramelized even more, down to a deep dark brown. Mmmmmmmmmm

You can caramelize them more if you make it.. some people might just have a preference maybe she was on a time crunch or just preferred them to be cooked enough but the raw flavors lightly aromatic

I'm only on breakfast so far. That almond ricotta is clutch. I've done tofu ricotta but I am also avoiding soy so seeing this is phenomenal. Zucchini rollups are a great dish for vegan gluten free and soy free with that ricotta!

Rachel's Egg Salad Sandwich 1 block tofu pressed for 15 mins Mix together: Vegan mayo Dijon Mustard Nooch Black salt Lemon juice Tumeric Paprika Garlic powder Salt and Pepper to taste Bunch of fresh chopped Chives Roughly chop tofu, add to the dressing mixture, and stir until well coated. Serve on toasted wheat bread with arugula. Yum! Thank you Rachel.

This video was great! I find that when I'm eating more plant based I'm somewhere in between the amateur vegan and the at home cook. I've done the 21 vegan challenge before and during that time did not really use any mock meats but afterwards ended up using them a lot. I'd love a video on creating building blocks for yourself to eat well on a plant based diet. I'd like to learn not to rely on mock meats and how to restructure my thinking not thinking of food groups but rather towards a balanced intuitive vegan eating without having to stress about extra prep. Thank you for all you do!

I was more pointing out the done for you products rather than from scratch. Like a newbie may use the fake meat and the more experienced person may create something out of mushrooms and walnuts or something. I think it probably adapts based on comfort and expense over time.

transitional for most of us. Cheese was my most challenging "loss". I now (after 4 years) use a little cheese or meat subs. But it's just occasional. I support Ehi in making the change in whatever way works best for him. When I become a millionaire I don't want a house cleaner or a chauffer, or personal assistant. These would be great for showing people how tasty vegan food can be, especially for special occasions, they're very high in fat and calories (aka comfort foods). The potato hash however, is more of a healthy/inexpensive every day meal option.

I made the almond ricotta. I didn’t have rice wine vinegar so I just used rice vinegar with some sugar and it turned out really yummy! I don’t think I ever ate ricotta before going vegan so I have no idea what it’s supposed to taste like. But it was delicious on my bagel!

These meals look so good to me. I do use the processed products along with more whole food products. I like to make jackfruit tuna instead of egg salad. I use lemon Mayo or garlic aoli as spreads for sausage egg sandwich w/ arugula & spinach mix. Also vegan potato rolls or vegan croissants work well, too.

I'm a vegetarian but I did it sooo backwards. In the beginning I was only eating fruits and vegetables- no substitute meats or anything. But after maybe 5 years of being a vegetarian I started trying some "mock meats" because my doctor told me I should try those in order to get more protein in my diet since I workout so much. And while they are okay I still prefer my vegetable lasagne/spaghetti, vegetarian Alfredo, etc over the ones with the mock meats. And I'm more plant based than I am vegetarian. Great video though! Everything looks so delicious!

@@dilan_2074 I do. I eat those quite a bit. But some days I just don't want that, you know? Some days I'll eat rice and beans or a bean and rice burrito or just a bowl of black beans with corn. Then other days I crave for something else but I still need the protein, that's where the "mock meats" come in. Still prefer beans and rice or any legume on an average day.

Whenever I make French onion soup, I just throw the onions on a pan and let them cook down. I make sure to monitor it and put in little bits of water to keep them from burning. There’s no need for butter and oil, and it’s still delicious. Also, this sounds weird…but steeping an earl grey tea bag in the broth adds another level of flavor.

While watching this video I learned I’ve been using my just egg ALL WRONG! Also, I can’t wait to try both the stroganoff and the French onion soup recipes, because these two were my favorites, but haven’t had either since I learned of my many food allergies. Thanks guys!😃🙏🏽
