Yield 1:
8 oz Sea Bass filets-skin on
½ Cup Eggplant/Aubergine, Sliced
1 Shallots, Sliced
1 large Garlic, Sliced
6 Heirloom Cherry Tomatoes
2 Tablespoons White Wine
2 Tablespoons Tomato Puree
3 Tablespoons Vegetable Stock
2 Tablespoons Olives- sliced
4-5 Sundreid Tomatoes
1 Calabrian Chilies, sliced
Salt and Pepper
Olive Oil
1 Sprig Oregano leaves, Smashed
1 Lemon zest and juice
1 cup Israeli Cous Cous (can be made in 10 minutes or use leftover - follow directions on box or bag)
Method:
Warm couscous or cook per instructions.
Start by heating a pan and adding a tablespoon of oil, start with eggplant and let brown and soften. Grate some fresh lemon zest over and season.
Remove eggplant on towel
Add a teaspoon of oil and add sliced shallots and garlic to pan, let soften
Then add sun-dried tomatoes, large diced pieces of chilies. Deglaze with white wine and add vegetable stock and tomato puree and mix. Then add tomatoes, olives and fresh torn oregano leaves. Add a tablespoon of olive oil and lemon zest to finish. Take off heat.
Meanwhile heat separate pan with olive oil, season fish and sear skin side down, flip fish after 4- 5 min.
Add 1 slice worth of lemon juice to couscous
Plate cous cous, top with tomato sauce and fish, garnish with parsley sprig/ lemon wedge

I love baby Oscar. What a wonderful and amazing life he will have. I’d love to come back in 75 years and listen to his life story. Wouldn’t that be interesting? Who runs the restaurants after Gordon Passes? I’m guessing Tilly with Oscar as a silent partner. So many questions, so little answers.

they are just guidelines I guess. A real chef knows how much they should or shouldn't add depending on what they want. I say real chef, but really anyone who gets the right feel of how much ingredients are really needed. (Isn't that a real chef? I don't know. but it is hilarious to see though the difference between a table spoon and what he put in.)

Made the sauce with basil instead of oregano and without dried tomatoes(just used fresh ones) but oh boy this was so tasty! Love this simple fresh tasting recipes without fancy ingredients. Keep them coming Gordon!

The problem was they were SUPER obnoxious and it was hard to focus on what he was doing because they were WAY too extra. Giggling non stop like they've never watched this man cook before when he's a professional celebrity chef. This channel makes a lot of money I'm sure so at some point you have to make sure the focus is on the food.

Eggplant goes very well with this type of fish. Who knew? My son and me caught sea bass and cod off the coast of Cali this summer. This was the first dish we made with it. We didn't stear from your recipe and it was very good. Well done sir.

they don't need salting prior to cooking the. A lot of pp will salt them and let them sit then drain them and squeeze. What he is saying here because they are small you don't have to do that step.

He's saying that it shouldn't be salted before cooking in order to drain the bitterness. You hist have to put them in a hot pan fresh without anything and then you salt them from there on. Clearly you didn't listen

You can never cook anything like that in under 10 minutes at home. Imagine taking things out from the fridge, preparing it, cooking it, keeping all the left overs away, washing all the dishes. I say 30minutes.

Its so impressive the way Gordon seems to know every little detail of each individual ingredient. To know that thin slices of eggplant need a hot pan with hot oil to stay crisp and clean is so impressive.

Had some nice fresh snapper and wanted to do something other than blacken it, worked in this recipe like a charm. Threw a few marinated artichoke hearts in the sauce too and served over creamy polenta. Definitely a winner.

EDIT: read description this was filmed before the family were all together. Looks like this isn't the direction these videos are going, phew! I really really miss the charm of the whole family. "Pan Down!" Great recipe, always love watching you cook, but this video felt worlds apart from the others in the series. Reconsider this! There was something truly magical being captured, and I feel this video lacks that. It's not enough to get a dislike -- but I just wanted to say I miss the natural, honest and intimate insight previous videos had.

Just made this great dinner with what I had and subbed a few similar keto friendly ingredients. Zucchini and asparagus is not eggplant and couscous though. Sauce was awesome on the sea bass. Ramsey demonstrates approximate measurements as always making you the chef.

I made Mediterranean sea bass for the first time tonight with a pepper medly. I was really intimidated because everyone on hells kitchen seems to mess up the sea bass. Lol. But mine came out perfect! I used coriander, cumin, black pepper, garlic and lemon peel for my spice mix. I used 3 types of sweet peppers with green onions and garlic. Great low carb, high protein meal.

The initial salting isnt seasoning, its done to make the eggplant sweat so that its crispier. Its not necessary for baby eggplants

You need to salt eggplant and let it sweat then pat dry the liquid that salt will draw out. If you don't do that with eggplant it will have a nasty bitter flavor kind of like burnt garlic.
